Meatless meals have come to my rescue many times over the years. When I hadn’t thawed any meat, when I forgot to get to the store, when I just couldn’t squeeze meat in the budget, meatless has been my friend.
A meatless meal comes together quickly without a lot of fuss. Like my Greek Eggs. Mmmm. Those are some of my favorites. I think I could probably eat that every day.
Or the swoon-worthy Quinoa Salad. Or Quick Seasoned Rice for Stovetop or Instant Pot.
Bryan and I have agreed that we like Peanut Butter Chicken without the chicken.
Yep, I could almost eat vegetarian all the time.
Why eat meatless meals?
There are plenty of reasons for enjoying meatless meals more often:

- offset spending so you can buy better quality meats
- avoid the hassle of locating difficult to find meats in your area
- avoid possible health concerns that may arise from too much meat
- be more conscious of ethical issues re: animal husbandry
How do you make meatless meals?
You may be surprised to find out that some of your favorite meals are easy to convert to meatless meals. In many cases it’s just a question of swapping one thing for another.
- Swap the chicken stock for water or vegetable broth.
- Swap in beans, mushrooms, eggs, cheese, tofu, or tempeh for the meat protein in the dish.
- Omit the meat all together and see how you like it. You may surprise yourself! (It helps to increase the veggies.)

My family will all tell you that they do not want vegetarian meals. Of course, they happily eat them on a regular basis. I just do not bill them that way. Among our family favorites are cheese quesadillas, waffles and pancakes, mac n’ cheese, grilled cheese sandwiches, potato soup, cheese pizza, and the list goes on. Any restaurant chef will tell you that how you describe the meal makes a world of difference.

I started Meatless Mondays in our house several months ago, and it’s been a bit of a learning curve, because I don’t want to ADD a pasta dish every week 😉
The most popular one in our house (2 adults, 1 from Texas, but open minded, and 2 kids, age 11 and 13) is a rice and bean casserole I generally adapted from a tater tot casserole (i think the casserole had meat, I subbed in beans). It’s essentially rice and beans mixed with some taco seasoning, cheese and frozen veggies.
I’ve also found (as I believe you mentioned) that lightly sauteed mushrooms or mushrooms mixed with yellow or zucchini squash can substitute for meat in just about any Indian or other stew dish. I’m trying to decrease our meat intake in general, particularly beef, for environmental reasons, and this has made a really big difference in the amount of beef I’ve been buying (I rarely buy it anymore, actually).

I love meatless meals, my husband not so much, but I cook, so at least once a week I try to get one in. Love veggie omelets or scrambles, pasta with a sauce and lentils for protein (or last night I steamed cauliflower and then pureed that with white beans, some butter and milk for a white sauce with sautéed spinach – it was great!), quinoa/veggie casseroles with various sauces, fried rice with extra eggs, and lots of Mexican variations with beans – casseroles and layered enchiladas are my favorite. And salads for lunch, I can’t get behind salad for dinner, with either hard boiled eggs or cold lentils for the protein.

Here in NH definitely soup!! I made squash apple lentil last week (with chicken broth and bacon grease but could easily be vegetarian or vegan). We also love Minesrone or barley bean veggie soup. Chili (New England style ?) goes over well and of course corn chowdah.

When I sat down and made a list it was longer than I expected. Eggs are a favorite for me and we always have lots of them on hand. A favorite is egg and cheese sandwiches on bread, but just biscuits or pancakes with eggs also show up when I’m more energetic.
Beans and rice in various combinations with or without cheese. If not flavoring beans with a bit of meat, I sometimes mix more than one variety such as pintos, great northern and navy or pink beans cooked together, since I think it adds flavor. Beans and cornbread is the obvious other side of the beans option and always good. Split pea soup, lentil casserole or soup, and bean soup with kale added are also good.
Pasta is an easy choice with mac-n-cheese, but I also like to fix linguine with a sauce made by sweating onion slices in olive oil and making a thin white sauce (using 2% milk) and adding a bit of Parmesan cheese.
I also found an interesting recipe for bulger pilaf on the Bob’s Red Mill Package that has onions and mushrooms that we like either instead of cereal in the morning or as a side, like with lentils or beans.
Soup is also popular at our house. Vegetable soup or any of the potato soup variations are a real hit especially if I have homemade bread of some sort. Potato soup variations for me include the corn chowders or the versions where I add other vegetables such as spinach or kale.
I also fix plain cheese quesadillas sometimes.

I like macaroni and broccoli.
1 head of broccoli
1 lb. penne pasta or any pasta of your choice
2 – 3 cloves minced garlic
extra virgin olive oil – about 1/4 cup
Cut broccoli including stem into bite size pieces. Put broccoli into a large pot and add enough water to boil the pasta in. When broccoli comes to a boil, add pasta and cook till done. Drain water. In a saucepan, heat olive oil; add garlic and sautee till golden. Pour oil and garlic over pasta/broccoli and add salt to taste.
