Eggs are delicious. Whether you’re making breakfast burritos or serving a fried egg over white rice, eggs are one of the best things to use as an affordable protein. They’re delicious and a great addition to meals any time of day, any time of year.
Wasting food is wasting money. When food goes to waste, so does the time and energy and money we spent to acquire it. We can stretch our resources farther when we stop wasting food.
How to Know an Egg is Fresh
First thing, it’s important to know when an egg is fresh. Believe it or not, the dates on the carton are not the best way to gauge freshness. A great way to test this is to do the float test.
- Drop an egg in a bowl of water.
- If it floats, it’s bad and should be discarded.
- If it sinks, it’s fresh.
- If it stands up on the end, it’s on its way out, so bake with it soon. (You’re sure to find an easy recipe below!)
How to Store Eggs for Later
If you don’t have time to cook your raw eggs in one of the recipes listed below, you can store your abundance of eggs until a later date.
- Prepare a egg bake, quiche, or other casserole and freeze it prior to baking.
- Make hard-boiled eggs. These will extend the life of the eggs by about a week.
- Freeze eggs. The easiest way to save eggs for future use is to freeze beaten eggs in an ice cube tray or Soupercube tray, one egg in each compartment. Thaw and use in baked goods as you would fresh eggs.
Avoid Egg Waste
Sometimes, you have a recipe that calls for just the yolks, like homemade mayo. You need to have a use for those extra whites. Meringue cookies, macarons, and pavlova are always a good option, or you can freeze the egg whites to use at a later date. My favorite use is just to add them to scrambled eggs for extra protein.
Likewise, if you make a recipe with egg whites, like angel food cake, it’s important to have a use for the extra yolks. Consider making a lemon curd or mayonnaise with the yolks. Or follow the USDA’s advice to add a bit of sugar and salt to the yolks prior to freezing.
Tasty Ways to Use Eggs
The great thing about eggs is that there are so many wonderful recipes and tons of ways to use them. Consider these ideas for putting the contents of your egg carton to good use:
- Make egg salad.
- Bake a lemon pound cake.
- Fry up a sweet potato hash and cook eggs in it.
- Serve a fried egg with a sausage patty or Canadian bacon in an English muffin breakfast sandwich.
- Make a bread pudding or French toast casserole.
- Scramble eggs with fresh veggies and feta cheese for a type of Greek eggs.
- Add hard cooked eggs to tuna or potato salad.
- Serve sunny-side-up eggs with runny yolks over toast.
- Make a crustless quiche with cheddar cheese and fresh herb to serve alongside a green salad
