Okay, you ready for the easiest quick pickled onion recipe? It’s so easy I almost didn’t write it down. But, my 25-year old son and I were discussing these easy meals for single guys and he brought up the topic of slop bowls.
Yes, slop bowls.
If you’re over 40 you may not be familiar with the term, it’s basically a rice bowl or a copycat Cava or Chipotle meal. It’s what the cool kids call those overpriced lunches that can be tasty, but also… overpriced.
Our conversation led to all the different things you could add to a homemade slop bowl and he mentioned the Quick Pickled Onions more than once, so here we are.
What are Quick Pickled Onions?
Not to be confused with traditional fermentation or even hot water canning pickling, this is truly super fast, quick pickled onions: sliced onions dressed in the vinegar of your choice and allowed to marinate for a bit until mellow but tangy.
They add a flavor that I love on salads!
Quick Pickled Onions are delicious on Mahi Mahi Tacos, as part of a Ploughman’s Lunch, or tucked into sandwiches like the epic Cheese and Pickle Baguette Sandwich.
Add them to a Relish Tray or Charcuterie Board. They add tang and texture and are utterly delicious.
While you can certainly buy pickled onions in a jar at the store, they can be rather expensive. This recipe helps you make a pantry staple for less!
Ingredients
Here’s what you’ll need to make Quick Pickled Onions:

onions – You can use red onions, white onions, or yellow onions. Just thinly slice them. If they are really large red onions, you may want to cut the rings in half or quarters. Pickled red onions will vary in color thanks to the vinegar. Remember you can freeze onions if you buy too many.
vinegar – You can use any kind of vinegar you like: apple cider vinegar, red wine vinegar, white vinegar, or my preference: white wine vinegar.
spices – Spices are optional, but I like to use salt and pepper in my pickled red onions. If you like your onions on the sweet side, you can add sugar as well. For a little extra heat, you can add red pepper flakes to the marinade.
Step-by-Step Instructions
There’s nothing simpler than making Quick Pickled Onions.

- Place the sliced onion in a small dish or mason jar.
- Pour the vinegar over the top and season to taste with salt and pepper. Allow to marinate for at least 30 minutes.
- Serve in bowls, salads, sandwiches, or charcuterie boards.
Store leftovers in an airtight container in the fridge for up to 4 days.

Quick Pickled Onions
Ingredients
- 1 onion sliced thinly
- ⅓ cup white wine vinegar or other vinegar of your choice
- salt
- black pepper
Instructions
- In a small bowl, place the onion slices. Pour over the vinegar.1 onion, ⅓ cup white wine vinegar, salt, black pepper
- Season to taste with salt and pepper. Allow to sit to allow the onion to marinade. This also removes some of the bitterness and heat from the onions.
- Refrigerate until ready to serve. Use within 4 days.
