It’s perfect served for breakfast with a fruit salad, but you can also serve it for a light lunch or dinner with a green salad. It makes a great brunch dish for Christmas morning!

Ingredients
Here’s what you’ll need to make Cottage Cheese Quiche:
pie crust – You can make a pie crust from scratch or use a refrigerated or frozen pie crust. See below if you’d like a crustless quiche option.
eggs – You’ll need three whole eggs for this recipe. If you’d like to substitute egg whites, you can use ¾ cup instead of whole eggs.
cottage cheese – Cottage cheese is a soft cheese that is high in protein. Blended, you won’t even know it’s there. It gives a light texture to the quiche.
milk – You don’t need a lot of milk, just ½ cup. Any type of milk is fine, though the higher the fat content, the richer the quiche.
shredded cheddar cheese – I’ve specified sharp cheddar, but you can use whatever cheese you have on hand, such as Swiss cheese or Monterey Jack. Pepper Jack adds great flavor, too. Remember you can freeze cheese if you have extra you won’t use right away.
sautéed onions – Oil, chopped onions, and salt and pepper for a quick sautéed onion add flavor and fiber to this easy recipe. See the optional mix-ins below if you’d like to try something besides onions.
salt and black pepper – Season your cottage cheese quiche simply with salt and pepper. You can also add other seasonings like garlic powder or a favorite dried herb.
optional mix-ins: Quiche is such a versatile dish. You can add in chopped green onions, roasted red bell peppers, chopped canadian bacon, crispy bacon, crumbled breakfast sausage, or diced leftover ham. Any bits of leftover meat, veggies, or cheese can be stirred into the basic mixture.
Variation: If you’d like to make a crustless quiche recipe, you can omit the pie crust. Grease the baking dish with cooking spray and pour the mixture into the pan. You can also make the mixture in muffin tins for single serve portions.
Instructions
Here’s how to make this easy Cottage Cheese Quiche Recipe:
- Preheat the oven to 350 degrees. Place a pie or quiche pan on a small baking sheet to make it easier to handle and to catch the drips.
- If you’re adding the optional sautéed onions, heat the oil in a pan. Add the chopped onions and season to taste with salt and pepper. Cook over medium heat for 5 to 7 minutes, or until the onions are tender and start to go clear.
- Lay the prepared pie crust into the quiche pan and trim the edges.
- In a large mixing bowl, combine the eggs, cottage cheese, and milk. With an immersion blender, blend until smooth. Stir in the cheddar cheese and onions and season to taste with salt and pepper.
- Pour this mixture into the pie shell. (This is the point at which you could freeze it, if making it in advance. Lay the pie plate on a rack in the freezer until firm. Wrap tightly with foil and place inside a labeled, ziptop freezer bag.)
- Bake the quiche for 30 to 40 minutes or until set and golden. Allow to cool slightly before serving. (If baking from frozen, there’s no need to thaw. Just add 5 to 10 minutes to your baking time.)
Serving Suggestions: This Cottage Cheese Quiche is delicious served with fruit and a baked good for breakfast, but it’s super tasty as a meatless main dish for lunch or dinner. Serve it with a cup of soup or a green salad.
How to Make a Meal Prep: Divide a quiche into four portions for easy lunches this week. Package in single-serve containers with airtight lids. Reheat before serving.
Make a Plan for Leftovers: Leftover quiche is good for up to 4 days in the fridge. If you store leftovers in clear air-tight containers you’re more likely to notice them and make sure they get eaten.
