I’m a little sad now that football season is over. It’s not that I care who wins or loses. Except that a Chargers loss definitely changes the atmosphere in our home.
No, I miss the food. Football season is a perfect excuse for me to bust out the snacks. I’m a big snacker. I’m coming to realize that — and make peace with it.
I also have a daily shredding session with Jillian. That helps me make peace with my snack habit. And allows me to indulge in these fabulous Garlic Brie Toasts.
They are similar to my Garlic Brie Bread, but easier to make and quicker to get from counter to oven to table.
French baguettes are brushed with a garlic-infused olive oil and topped with a slice of Brie cheese. Broil for about five minutes and you have a lovely appetizer or a great side dish to dip into soup.
Recipe: Garlic Brie Toasts
Ingredients
- 1/2 French baguette, about 9 inches in length
- 1 tablespoon olive oil
- 1 teaspoon chopped garlic
- 4 ounces Brie cheese
Instructions
- Preheat the broiler.
- Slice the baguette on the bias into 8 one-inch slices. Place the slices on a baking dish.
- In a small dish, combine the olive oil and garlic. Brush this mixture over the bread slices.
- Cut the Brie cheese into 8 equal portions. Place each slice on a slice of bread.
- Broil until the cheese bubbles and the bread is toasted, about five minutes. Watch carefully to avoid burning.
- Serve immediately.

These look so good! I love your recipes. Not many weeks go by when we don’t have SOMEthing from your blog! I also shred, and walk/run to help with the delicious eating and snacking.
