Pantry Challenge 2011: Day 19

This was Day 19 of my Pantry Challenge. If you want to join me, go check out the details and sign up here.

I didn’t wake up feeling unwell, but by the time the kids woke, I knew I wasn’t quite myself. I had already put lunch in the crockpot. Good thing.

My oldest son made pancakes, even snowmen pancakes, for the rest of the fam.

Then I got dinner in a second crockpot and shifted into low gear. Hoping tomorrow to be better.

Here’s what I served my family today

Breakfast – Pancakes

Lunch – Pork Roast, Fresh Bread, Corn

Dinner – Salsa Verde Beef, Rice, Tortillas, Green Beans

  2. Hehe….kids can do so many creative things :) Good job on your sons part! Hope you feel better soon, still lingering huh? :(

  3. Such a good idea to get lunch & dinner in the crockpot before you run out of energy. Rest & feel better soon!

When you show your lists for what you feed your family for the week, do break it down by days? I.e.(Sunday breakfast is pancakes, lunch is leftovers, dinner is roasted chicken), or do you plan out all breakfasts, lunches & dinners, & decide… the day of what you’re going to serve your family?

    • @Denise C., it depends on the week. I sometimes assign every day its three meals. But, often I just make lists of the three meals and then choose from those as each day progresses.

Have you seen my planning ebook? There are lots of choices of forms in there for meal planning.

Thanks Jessica! I wrote out a list today of all the breakfasts, lunches, & dinners I have on hand in the house. I am going to start simple & just pick from the list! I will check out your ebook! :)

  5. How cute! My kids would love this! Thanks!

  6. I’ve never done a pork roast in the crock pot – but have one in the freezer. Any recipes or tips?
