Pantry Challenge, Day 16: A Home Run

During the December Freezer Cooking Daze, I cooked up a lot of shredded beef, made gravy with the drippings and some broth, and then froze it. It has been an amazingly helpful resource to have at my finger tips. And in doing so, I discovered a very simple meal, albeit very un-fancy, that the kids (and parents) love! Shredded Beef and Gravy over Mashed Potatoes. I usually serve it with some veggies — and it all disappears.

The gravy reheats well, making it a fantastic freezer item. Gravy is such a pain to make fresh!

Breakfast: Pancakes and Bacon
Lunch: Burritos and Hummus Wraps
Dinner: Shredded Beef, Gravy, Mashed Potatoes, Broccoli

The Pantry Challenge is working pretty well so far!
