Avocado Salsa

Avocados have a wonderful buttery flavor that works excellently in Mexican foods. You’re probably already familiar with Guacamole. Avocado salsa is the chunky version of guac. Instead of mashing the avocados, leave them in chunks and add your other salsa ingredients. Use avocados that are just ripe, but not mushy.

This salsa goes well on salad and also serves as a great accompaniment to taquitos and tacos.

I love avocados. Guacamole is one of my downfalls…I just can’t get enough. We’ve been slicing av’s on salads, sandwiches and just to eat plain. Mmm.

Looks so yummy! I happen to have 2 ripe avocados and a bag of fresh roma tomatoes calling my name. :) This will be made!

Do you have a good pico de gallo recipe? I LOVE pico but haven’t found an authentic recipe yet.
