What’s on Steph’s Plate?
Spaghetti squash will never fool a die-hard pasta fan. However I do think a pasta fan (and others) can appreciate what spaghetti squash brings to this classic dish full of garlicky, tomato goodness. After all, there’s nothing like Italian food. And there’s nothing like getting an extra serving of vegetables while you munch on something that could be Italian food.
Spaghetti Squash Pasta
1 large spaghetti squash
1 clove of garlic, minced
2-3 Tablespoons butter
2- 4 Tablespoons grated Parmesan cheese
1 Jar spaghetti sauce or 2 cups Red Sauce
1/2 – 1 lb. ground beef or turkey (or your preference of meat)
Optional: 1/2 – 3/4 C. Cooked spinach, diced
Wash and roast spaghetti squash according to your preferred method. Scoop out the spaghetti-like flesh and sauté in a pan with garlic, butter, and parmesan cheese. Combine spaghetti sauce, meat, and optional spinach in saucepan. Heat, stirring occasionally. Serve like spaghetti, with garlic bread and a salad.
