brown sugar – I like to use dark brown sugar because it has a little more blackstrap molasses in it. (That’s right, brown sugar actually has molasses in it!) You can make your own brown sugar or just use regular and add the molasses to the pot.
water – I use filtered water to make this traditional simple syrup.
ground spices – I use ground cinnamon, nutmeg, ginger, and cloves because I like the look of the spice flecks in the syrup.
Variation: If you prefer, you can use fresh ginger, like in our Ginger Syrup and then add whole spices such as cinnamon sticks, allspice berries, and whole cloves while simmering. If you end up using whole spices, be sure to strain the liquid through a fine mesh sieve before storing.
Step-by-Step Instructions
Here’s how to make gingerbread syrup:
In a medium saucepan, combine the sugar and water. Bring to a low boil over medium-high heat, stirring to dissolve the sugar completely. Simmer for 3 minutes, uncovered, stirring occasionally.
Stir in the spices and remove from the heat. The syrup will thicken as it cools.
Store the syrup in mason jars with lids or other flask or bottle for up to 2 weeks.
To use: add 1 to 2 tablespoons syrup or more to taste to favorite beverages and cocktails. It is delicious in coffee, tea, frothed milk, apple juice, and soda water.
