    More than just a chocolate chip cookie, these Coffee Cookies have a double shot with instant espresso powder as well as espresso baking chips to bring that lovely coffee flavor to the cookie dough. This will soon be one of your favorite cookie recipes.

    I’m not sure why I didn’t think of it sooner, but I’m so glad I did. Combining coffee into a cookie is like having the best of both worlds. They may look like chocolate chip cookies, but these Coffee Cookies are so much more!

    If you love a cup of joe, then you’re going to love these!

    Why Make This

    They’re packed with coffee flavor. We tested these multiple ways, with espresso powder, coffee liqueur, coffee extract, and espresso chocolate chips. We found that the combination of instant espresso powder and espresso chips really brought the flavor. In fact, they were even better the next day.

    They are easy to make. Similar in style to a classic tollhouse, these are easy treat to bake.

    They’re freezer-friendly. Stash your freezer with a batch of these so you can enjoy Coffee Cookies morning, noon, and night.

    Ingredients

    Here’s what you’ll need to make Coffee Cookies:

    sugar – Regular granulated sugar is just right for these cookies. While you can use light brown sugar, I think that the coffee flavor comes through better with granulated.

    butter – I use room temperature salted butter, but you can use unsalted, plant-based butter, or margarine in these cookies. 

    egg – You’ll need two eggs for this recipe. While you can use a flaxseed meal egg substitute, the texture will be a bit different. 

    vanilla extract – A bit of vanilla is great for rounding out the chocolate espresso flavors in these cookies. 

    flour – I use unbleached, all-purpose flour but you can use regular as well as whole wheat pastry flour. Again, the simpler the other ingredients, the stronger your coffee flavors can shine.

    espresso powder – Instant espresso powder blends really well into the dough. You can also use instant coffee granules, coffee liqueur like Kahlua, or coffee extract.

    leavening – You’ll need both baking powder and salt to help the texture and lift of these cookies. Don’t omit either. If you use unsalted butter, add ⅛ teaspoon more salt. In a pinch you can make your own baking powder substitute with baking soda and cream of tartar. 

    espresso baking chips – Nestle makes espresso chips that are fantastic in this recipe. You may also find products called cappucino chips from Bakers Choice and Oh Nuts. If you can’t find any of them, you can use chocolate chunks or chips instead.

    Step-by-Step Instructions

    Here’s how to make Coffee Cookies:

    • Preheat the oven to 350°. Line baking sheets with parchment paper.
    • In a large mixing bowl, cream together the butter and sugar. Mix in the eggs and extract and beat until combined.

    • In another bowl sift together the flour, espresso powder, baking powder, and salt. Add this to the butter mixture along with the espresso baking chips. Stir well to combine.

    • Roll cookie dough balls of a tablespoon cookie dough each and place onto lined baking sheets. Bake for 8-10 minutes. Place on cooling rack.

    To freeze: package cooled cookies in a ziptop freezer bag or other freezer container and store in the freezer for up to 2 months.

    FAQs

    Do coffee cookies have caffeine?

    Coffee cookies will have a small amount of caffeine, not as much as a cup of coffee, but some.

    Can you add coffee to cookies?

    While you could certainly use brewed coffee as some of the liquid in cookie dough, that scant amount won’t really bring much flavor. Instead use instant coffee granules or espresso powder, espresso chips, coffee liqueur, or coffee extract to bring enough flavor to your coffee cookies recipes.

    • sifter
    • rubber spatula
    • heavy duty sheet pan
    • parchment paper
    • wire rack

    Ingredients

    • 1 cup sugar
    • ¾ cup butter softened
    • 2 egg
    • 1 teaspoon vanilla extract
    • 2 ⅓ cup unbleached, all-purpose flour
    • 2 teaspoon espresso powder or instant coffee granules
    • 1 ½ teaspoon baking powder
    • ½ teaspoon salt
    • ¾ cup espresso baking chips

    Instructions

    • Preheat the oven to 350°. Line baking sheets with parchment paper.
    • In a large mixing bowl, cream together the butter and sugar. Mix in eggs and extracts and beat until combined.
      1 cup sugar, ¾ cup butter, 2 egg, 1 teaspoon vanilla extract
    • In another bowl sift together the flour, espresso powder, baking powder, and salt. Add this to the butter mixture along with the espresso baking chips. Stir well to combine.
      2 ⅓ cup unbleached, all-purpose flour, 2 teaspoon espresso powder, 1 ½ teaspoon baking powder, ½ teaspoon salt, ¾ cup espresso baking chips
    • Drop the dough by tablespoons onto prepared baking sheets. Bake for 8-10 minutes. Cool on rack.

    Notes

    Store the cookies in an airtight container at room temperature for up to a week or in the freezer for up to 2 months.

    Substitutions
    • Instead of espresso powder, you can use coffee extract or coffee liqueur.

      Jessica, these look and sound great. I think I will make up a batch sometime soon. Thank you for sharing. I have used espresso powder in brownies, but never thought about cookies.
