Here’s what you need to make your own Chipotle Mayo:
chipotle chile in adobo sauce from a can – There are typically about ten peppers in a standard can — a little goes a long way. Be sure to read the notes below for freezing the leftovers. If you prefer, you can use ground chipotle chile instead. The texture will be slightly different, but still delicious.
mayonnaise – You can make your own mayonnaise or buy your favorite brand.
Step-by-Step Instructions
- If using a canned chipotle pepper, chop it finely.
- In a small bowl, combine the mayonnaise and chipotle chile and sauce (or ground chile powder).
- Stir well and refrigerate until ready to use.
Note about leftovers: there are few recipes that call for an entire can of chipotle peppers. Rather than let them go to waste (or binge on chipotle-flavored foods all week long) freeze them! You can do this in one of two ways:
- Divide them into small airtight containers or snack-size ziptop bags and store in the freezer. Be sure to label and date them.
- Lay out each chile on a sheet pan lined with a piece of parchment, distributing the sauce among them. Freeze until firm. Wrap up in the parchment and place in a labeled ziptop bag and store in the freezer.

I can put this on everything, right?? I made veggie sándwiches on a baguette with cucumber, tomato, red onion, and romaine and they were delicious. The corn suggestions below sounds tasty as well. Thanks for another great recipe!

Two things – first…did you notice on the can it says chiLpotle? Weird.
Second…This stuff is amazing stirred into corn (grilled is best; frozen is good too) with some Cotija cheese, fresh lime juice and a little cilantro (or not). Fantastic side dish for all your Mexi-meals!
