This is a big hit at our house. My favorite add ins are black olive, tomato, cucumber, and mushrooms with a vinaigrette type dressing. My mom makes a very similar salad with cheese tortellini, Italian dressing, celery, artichokes, and the veggies I mentioned above. Quick to make, filling enough to be a meal, but not too heavy when its hot out.
