Ice cream sundaes boasting holiday gingerbread flavor are the perfect sweet treats for the holiday season. You don’t even have to bake Christmas cookies or decorate gingerbread men!

Ingredients
You only need five ingredients to make a Gingerbread Ice Cream Sundae:
ice cream – Use whatever ice cream you like. I chose vanilla, but if you have a favorite flavor like lemon or caramel, those flavors will work well, too. If you want to take these sundaes over the top, bust out the ice cream maker and make homemade vanilla ice cream.
gingerbread or gingersnap cookies – You can use homemade gingerbread cookies or something simple like Biscoff. Just crush them into fine crumbs, leaving a few chunks. If you like a more cake-like texture mixed with ice cream, crumble a few slices of Gingerbread Loaf. If you have leftovers from a larger Gingerbread Cake, store those in the freezer for easy sundaes in the coming weeks.
gingerbread syrup – You can buy a commercial syrup, but I recommend making this homemade gingerbread syrup. It comes together quickly and really has wonderful flavors. In a pinch, you can use caramel sauce and stir in a bit of pumpkin pie spice.
whipped cream – I use heavy cream and make whipped cream with a bit of vanilla and maple syrup. You can also use Cool Whip or a canned whipped topping.
Christmas sprinkles – The sprinkles are optional, but I like how they bring the idea of a Gingerbread house to the sundae.
Step-by-Step Instructions
Here’s how to make a Gingerbread Ice Cream Sundae:
In a tall sundae glass, place several scoops of vanilla ice cream, sprinkling cookie crumbs in between the scoops. I like to do this in advance and store them in the freezer. That makes for a frosty glass and a really nice texture to the sundae.
?Drizzle the syrup over the ice cream. Add more cookie crumbs to taste.
Top the whole thing with whipped cream and sprinkles. Serve immediately.
To make ahead: Prepare all the components in advance. Store the scooped ice cream in the freezer and the whipped cream in the fridge.
You can assemble sundaes and freeze them, waiting to add the whipped cream and sprinkles right before servings.

Notes
- Stock up on ingredients when they are on sale. The holidays are a great time to stock up on baking ingredients. You may even find gingerbread cookies on sale. Ice cream tends to go on sale fairly often; I usually buy several flavors at one time and stash them in the freezer.
