    • Gingerbread Ice Cream Sundae

I love gingerbread man cookies. And I’m a huge fan of ice cream. What happens when you combine them into a yummy gingerbread ice cream sundae? It’s the perfect combination of creamy and spicy, crunchy and smooth.

Ice cream sundaes boasting holiday gingerbread flavor are the perfect sweet treats for the holiday season. You don’t even have to bake Christmas cookies or decorate gingerbread men!

This is the perfect festive holiday dessert to serve at get-togethers with friends or to enjoy while watching a Christmas movie with the fam.

    Why Make This

It’s a quick dessert. Ice cream sundaes always feel special but they are so easy to make! You only need an ice cream base, a favorite syrup, a crunchy topping, and some whipped cream.

It’s delicious! Gingerbread Ice Cream Sundaes are a great way to enjoy your favorite warm spices in a creamy dessert. The crunch of the cookie crumbs is a perfect complement against the smooth custard of ice cream.

It’s a good cheap eat. Since you can use the rejects from your gingerbread house projects or just buy a box of grocery store cookies on sale, this dessert doesn’t cost much at all.

    Ingredients

You only need five ingredients to make a Gingerbread Ice Cream Sundae:

ingredients to make gingerbread ice cream sundaes laid out on white counter.

ice cream – Use whatever ice cream you like. I chose vanilla, but if you have a favorite flavor like lemon or caramel, those flavors will work well, too. If you want to take these sundaes over the top, bust out the ice cream maker and make homemade vanilla ice cream.

gingerbread or gingersnap cookies – You can use homemade gingerbread cookies or something simple like Biscoff. Just crush them into fine crumbs, leaving a few chunks. If you like a more cake-like texture mixed with ice cream, crumble a few slices of Gingerbread Loaf. If you have leftovers from a larger Gingerbread Cake, store those in the freezer for easy sundaes in the coming weeks.

gingerbread syrup – You can buy a commercial syrup, but I recommend making this homemade gingerbread syrup. It comes together quickly and really has wonderful flavors. In a pinch, you can use caramel sauce and stir in a bit of pumpkin pie spice.

whipped cream – I use heavy cream and make whipped cream with a bit of vanilla and maple syrup. You can also use Cool Whip or a canned whipped topping.

Christmas sprinkles – The sprinkles are optional, but I like how they bring the idea of a Gingerbread house to the sundae.

    Step-by-Step Instructions

Here’s how to make a Gingerbread Ice Cream Sundae:

In a tall sundae glass, place several scoops of vanilla ice cream, sprinkling cookie crumbs in between the scoops. I like to do this in advance and store them in the freezer. That makes for a frosty glass and a really nice texture to the sundae.

adding more cookie crumbs to the top of the sundae.

?Drizzle the syrup over the ice cream. Add more cookie crumbs to taste.

Top the whole thing with whipped cream and sprinkles. Serve immediately.

To make ahead: Prepare all the components in advance. Store the scooped ice cream in the freezer and the whipped cream in the fridge.

You can assemble sundaes and freeze them, waiting to add the whipped cream and sprinkles right before servings.

    • 3 gingerbread cookies crushed
    • 1 to 2 tablespoon Gingerbread Syrup warmed
    • whipped cream for topping
    • holiday sprinkles

    Instructions

    • In a martini glass or sundae dish, layer ice cream scoops and crushed cookies. Drizzle the syrup over the top.
3 scoops vanilla ice cream, 1 to 2 tablespoon Gingerbread Syrup, 3 gingerbread cookies
    • Add more cookie crumbs over the syrup. Top with the whipped cream and sprinkles. Serve immediately.

    Notes

    • Stock up on ingredients when they are on sale. The holidays are a great time to stock up on baking ingredients. You may even find gingerbread cookies on sale. Ice cream tends to go on sale fairly often; I usually buy several flavors at one time and stash them in the freezer.
    • Bake your own cookies to save money. We love this recipe for Molasses Crinkles. You can also prepare this with crumbled Gingerbread or Gingerbread Loaf.
