The Easter holiday lends itself to crafts and fun food. Why not add a little whimsy to the table with an Easter Veggie Tray?
Shaped like a traditional Easter egg with alternating rows of color and texture, this is a simple touch that makes your tablescape a little more fun.
Why Make This
It’s easy! It’s not hard to arrange your vegetable tray in the shape of an Easter egg. It’s one of those budget-friendly appetizers everyone loves.
You’re gonna serve veggies anyway. Since you’re likely going to serve some crudités vegetables anyway, why not put in a little extra effort for a bigger wow factor? It’s a good healthy option to follow those Easter Bunny Cinnamon Rolls!
Ingredients
Here’s what you’ll need to make a fun Easter veggie tray:
To make a veggie tray that really pops, be sure to select a variety of vegetables with a mix of colors and textures. Some great options include baby carrots, celery sticks, bell pepper strips, grape tomatoes, whole sugar snap peas, sliced English cucumbers, and broccoli or cauliflower florets. Take a walk on the wild side with things like purple carrots or watermelon radishes.
We’re creating an Easter egg-shaped veggie tray, so choose vegetables that can be cut into fun and interesting shapes. Use a crinkle cutter for carrots or mix up the sizes of your vegetables too – cut some into bite-sized pieces and leave others whole.
Vary the colors as much as possible for a rainbow of color — or focus on a one color of veggies of different hues and set them up in an ombre pattern.
Be sure to serve it with some dips like my easy Creamy Garlic Dressing.
Step-by-Step Instructions
Here’s how to make an Easter Vegetable Tray:
Select a large oval-shaped platter for your Easter celebration. This mimics the shape of an Easter egg.
Depending on how large your oval is, set up five to seven different rows of veggies, alternating their color and shapes to represent the designs on a traditional Easter egg.
Cover and place the tray in the fridge until ready to serve. Serve it with dips on the side.
Variations
There are many different ways you can set up your veggie trays. Consider these variations:
Easter Fruit Tray – Do the same type of tray but with spring fruit! Serve with Easter Oreo Cookies and Easter Basket Pretzels.
Easter Charcuterie Board – In addition to veggies, include pickles, olives, Ritz crackers, and sliced cold cuts.
Easter Bunny Veggie Tray – Instead of an Easter Egg, lay your veggies out in the shape of a bunny. You can buy a bunny tray for this purpose or simply lay the veggies out in a rabbit shape, with lighter-colored veggies and crackers for the body, red bell peppers for the inside of the ears, and a cherry tomato nose.
FAQs
If you’d like to serve this on Easter Sunday, you can prep it as early as Friday. Any earlier and your veggies may start to dry out.
If you’ve got vegetables leftover from a veggie tray, you can add them to salads or cook them as a side dish. They can also be incorporated into soups, pasta dishes, and casseroles.
To save money, focus on vegetables that are on sale or those that are naturally frugal, like carrots, celery, and cucumbers.
