What’s on MY Plate?

The other night, we enjoyed a tweak on a family favorite. I took my standard Mac & Cheese recipe and made it a little fancy. I subbed jack cheese for cheddar and stirred in a little pesto as well as some tomatoes. The result?

A tremendously rich and decadent meatless meal. A large salad of baby greens and some garlic bread rounded it out.

Take your favorite recipe this week and tweak it a little. You’ll be pleasantly surprised.

I love this idea! We grow basil every year, and I freeze it in cubes as pesto. I usually drop it in tomato sauces. We also like to mix it with pasta and sprinkle romano cheese over top. Another idea is to mix it into the ricotta mixture for calzones.

Hey Jess! I had an adventure yesterday and it ended up on my plate! I made gnocchi for the first time and then I pan fried them into little crispy pillows thanks to mark bittman’s instructions. I then sprinkled them with foraged white pine needle tips crushed in sea salt. They were amazing! All the best, Alex
