I got a picture for you this morning! Just me and last night’s Breakfast for Dinner leftovers in the dark.
I must say that this meal confirmed my long-held belief that eggs should not be frozen and/or reheated. Last night’s scrams got very rubbery. Meh.
What We Ate
Breakfast – There were mushrooms, hash browns, sausage, and eggs leftover from last night so I reheated those in the microwave. The leftover biscuits disappeared in the night apparently.
Lunch – It was a photo shoot day which meant tasting and stirring and snacking so I didn’t really make anything substantial.
Dinner – Friday is always pizza night. We had our regular round of pizzas with homemade ranch dressing.

We needed to run a few towns over to pick up pointe shoes for DD, so we ran errands and grabbed lunch out. We gassed up, made a return, and hit the grocery store but only purchased produce, a little dairy, and a couple of pantry staples that we’ll use in meals to help clear out the freezer. We snacked a bit in the afternoon on some odds and ends. The boys were out at a college basketball game in the evening and we girls weren’t hungry at the same time so we each just had leftovers for dinner.

Maureen, pointe shoes. Oh that brings back long ago memories. I remember how my first pair smelled! And good for restraint in the grocery store 🙂

I see from last year’s post that it was this time last year we got our 5-6 inches of snow. It was beautiful but so unusual to get that much here. The cold temps kept lots of bodies of water frozen for a while. I remember traveling to see my mom, and there was still ice on all the bridges and some highways long after the snow was gone.
Looks like we will miss Fern’s ice and snow which is okay by me. Stephanie and Heather M, glad y’all are ready. My DD in Arlington and my son here in NC are as ready as possible. Just hoping the power outages are less than predicted for everyone and that everyone can stay warm.
B: yogurt with add ins, coffee. I think DH may have had an egg and toast.
L: DH took a friend out to lunch. I had LO beans and rice.
D: a ham steak from the freezer, baked sweet potatoes, sauerkraut and baked apples.
We usually eat chicken, chicken and chicken. We had eaten some early in the challenge but none lately since we were out. BSCB were on sale as was ground beef and I was ready for a change. Silly me thinking that any sale items would still be in stock with a storm coming, even though we are now supposed to get just rain! I came home with neither. I did pick up gold potatoes 5# for $2 which was a great deal. Also picked up 2 bananas for DH. The Dave’s bread was NOT on sale in my area so I picked up whole wheat instead. I spent $4.92 for a total of $74.13 for the month, though had those items been in stock, I would have spent more. We will see how the next week goes.
And Stephanie, I’m glad you recapped your journey as I remember when you went through that, but couldn’t remember the year. Your will power is amazingly strong and admirable! Proud of you. And btw I have lots of friends and former colleagues who hailed from Richmond and the the surrounding counties.

B – the usual
L – I went out with an elderly friend to a restaurant that she lives close to but had never tried. Hubby and I have been quite a few timesand I thought she would enjoy it. They seated us right by the fireplace – just heavenly on a cold day. She had a burger and wedge fries, that she thoroughly enjoyed. I had Cullen skink – a soup made with smoked haddock and served in its own little soup tureen. Absolutely gorgeous!
S – taco soup which used beef from the freezer and lots of tins from the pantry and a few veggies from the fridge.

Jan 23: in which u ran all the errands before the bitter cold started at night. Got Christmas decor and luggage returned to the storage unit (we have no attic/basement, and a 1 car a garage used for our car and not storage lol- a storage unit nearby is much cheaper than a new house), lightbulbs secured (we are out of all of them and have burned out bulbs suddenly!), a full tank of gas, and more taken care of. The guys were really wanting pizza, too so….
Breakfast: I had the last scone from Christmas before all the errands
Lunch: L ate out with colleagues; C took leftover kung pao chicken and rice, a Kind bar, and kiwi; I had a tuna sandwich and a pear
Dinner: pizza from a favorite place nearby
