This month, we’re shopping our kitchen in order to use up what we have so we can save money and clear kitchen clutter.
Here we go with Day 16 of the Pantry Challenge!

A few of us are feeling under the weather today, and the outside weather pretty much matches. The house is chilly, so much that I even turned on the furnace for a few minutes.
Clearly, I’m not 100%. Ha!
What We Ate
Breakfast – We still have a couple dozen eggs from the 5 dozen my friend bought for me in Clovis. I stretch them with egg whites which are still readily available around here. Today I pulled a loaf of bread from the freezer and sliced up some chicken sausages to go with.
Lunch – The girls made lunch for us: potstickers and ramen. I had chicken on mine; the others had fried spam.
Dinner – I had a bag of potatoes that were sprouting and a different kind of sausage in the freezer so I made Sheet Pan Sausage and Potatoes and sautéed some green beans.
How did Day 16 go for you?

Nick was at work, so I’m not sure what he had for breakfast and lunch. It was a work-from-home day for me.
Breakfast: A true Pantry Challenge meal. Nick had put the tiniest little bit of leftover burrito filling back in the fridge. Honestly, at first, I was a little annoyed since it wasn’t even a full serving. But I decided to get creative and had that with a fried egg, Tajin, and salsa on top. It was awesome!
Lunch: I had a stuffed chicken breast from the freezer.
Dinner: We got Thai food.

B: yogurt with hm jam and walnuts, coffee. DH had yogurt and a whole wheat English muffin.
We left after breakfast for my out of town/out of state-VA doctor’s appointment. Last time we went about a month ago, I wasn’t prepared and we ate expensive fast food. I had made pimento cheese for sandwiches. Though the pimentos were a bit sparser than usual, it still tasted good in our sandwiches and we saved money for healthier food.
L: pimento cheese sandwiches with mandarin oranges. We both added a cup of LO soup when we got home mid afternoon.
D: chicken quesadillas with chicken, peppers and cheese and avocado and sour cream for toppings. Added black beans, apple slices and collards for sides. Collards are an odd side for Mexican but they’re a non starchy green veggie and I got them out of the freezer. Plus we southerners love our “greens” anytime!
When I found the maseca in the cupboard the other day, I was thinking I might need to make tortillas. Then I looked in a different cabinet and found FORTY-yes 40, flour tortillas! This is what happens when one doesn’t inventory the pantry. SMH, But now I don’t have to make any, but need to figure out just how to use them all. (Or how to make a dent in them!)

I am laughing at myself. I read your comment twice thinking it was mascara in the cupboard and couldn’t figure out why finding that would make you need to make tortillas. The third time I was oh maseca!.

you could make enchiladas and make some to freeze for later? That would knock out some of that pile of tortillas. And schedule more mexican dinners in the next few weeks, be it quesadillas or burritos or soft tacos… As for the maseca, I have yet to try to use up a bag of it. I once years ago bought some to try making something and never did and eventually threw it out. Those kinds of cornmeals come in a few different types, for making tamales, arepas, pupusas, corn tortillas…. but idk which is good for what item. Also, it can be added to soups and such, too, from what I’ve read. Good luck!

Heather, a woman I worked with told me to get this kind for corn tortillas. Thankfully, it’s a small bag (1.25#) which I should be able to use eventually. When I made the chicken tortilla soup, it called for some in the soup.

What we ate on Jan 16
Brunch – We split/finished off the chicken thigh/couscous/broccoli leftovers from 2 nights ago.
Dinner – I made a small pizza for the 2 of us (using 00 flour) and we ate it with a salad of romaine, celery, red pepper & red onion. I made a small jar of a creamy Italian dressing for the salad (& dip for the pizza crusts!) and also finished off a bag of seasoned tortilla strips that we like for salads.
My habit re: salad greens (for us, typically romaine, green leaf lettuce & spinach) is to remove them from whatever they come home in, pull them apart (if necessary) and store them in layers in tupperware with paper towel between each layer. Leaf lettuce also gets a good rinse, spin & thorough dry (between clean tea towels) 1st. I am amazed at how much longer these items last us now.

Leftovers for lunch. I popped a big batch of popcorn for everyone to snack on. In an attempt to use up an open sauce in the fridge, I made stirfry (also using some frozen uncooked chicken from Christmas). I used green beans instead of our usual veg mix because that’s what was in the fridge. Progress, but there’s still some sauce left. I did have enough chicken for 2 full meals, so I marinated both and tossed the second meal in the freezer for another day. I’m definitely making progress, but the freezers don’t look like it (and my tupperware drawer is very light). With the weekend coming, I’m going to try to dig a few things up for meals and snacks that make some space – I think I need to gain a bit more momentum.

I can relate with things not looking like much progress has been made. I think for me it is that everything was so stuffed full and now it’s all just normal full? Anyways, this second half of the month should hopefully help the progress. Good luck!

Another busy day that ended with the most fun Book Club, which kept some of us there until midnight — it was too much fun this month.
B: everyone skipped
L: L took a salad with chicken pulled out of the sauce from Weds night, a pear, and almonds; L took leftover turkey curry with spinach over rice, cornbread, and a Kind bar; I had toasted open face turkey on multigrain that’s been in the freezer for ages and almost gone, a pear, and some lentil-rice snack rings(these became a thing for me in 2024)
D: quick and yummy one, very challenge friendly-blackened mahi mahi(freezer; homemade blackening seasoning) over mashed potatoes(the packet from the cupboard kind, with added chopped green onion), steamed green beans(freezer)

Thursday, January 16, 2025
B – I had overnight oatmeal. Paul flew home from Savannah today but didn’t get home till lunchtime.
L – Paul had a bowl of Italian sausage soup that I pulled from the freezer from a previous meal. One bag of that soup left in there. He also had the last dinner roll from one of the two bags. I had the leftover shrimp scampi over whole wheat pasta.
D – burgers and French fries. We used up the last of the French fries and the last two whole wheat English muffins.
After dinner I decided I wanted to buy some mini banana muffins for our 11 month old grandson who’s never had a muffin before. I babysit him everyday. So I put on my jacket and as I’m heading out the door to run to Publix, I had one of those “I should have had a V8” moments and slapped the side of my head. I realized I had bananas in the freezer so in keeping with the challenge I took off my jacket and got baking. I made a bunch of them and was happy I remembered those bananas in the freezer. All in all it was a great challenge day.

B:hubby had his usual. I had s rambled egg on toast
L: tne condo had a soup lunch. It’s a nice opportunity to get to meet some of the others who live here. If you live on different floor, you often don’t see someone in a while. So we had home made soups, bread, corn muffins, brownies and a cranberry almond cake, with tea and coffee.
S: neither of us wastoo hungry, so we snacked our way thru the fridge, and finished off the Italian bread from lunch with cheese or jam a d quite possible some cookies!
Now that my soup contribution is out of the freezer. I can see a big empty space in there!

Yes lol. I loath wasting food but at least this way it’s not wasted completely and will fertiliser at my garden. Normally I’d turn it into soup but it was left out too long

Breakfast- a Trader Joe maple scone mix, link breakfast sausage
Lunch-LO chili and corn bread
Dinner-shrimp fettuccine with jarred alfredo sauce, salad and garlic butter crescent rolls
I revitalized the romaine in an ice water bath. That’s the last of the lettuce so onto the cabbage from the back refrigerator. I also found a Swiss Colony tin of chocolates and a box of petit fours in there that I must have forgotten to put out for Christmas so now more snacks for us.

Well for the first time in January we “ate out” Not really but I stopped at City BBQ and got 2 lbs of pulled pork. I went straight from work to pick up my husband and we were getting home late. I didn’t have it in me to really cook. But I used my own buns and cheese and made a side to go with the pork I bought.
B – leftover muffins or toast, yogurt and or fruit
L – I took leftover chicken, dh took leftovers of some kind with fruit (he also keeps granola bars at school for snacks)
D – the BBQ sandwiches and roasted broccoli with peppers

D: dh was up for more substantial food so we had chicken burgers with the fixings, roasted potato wedges and finished up slaw and green beans

The girls got two snow days after no school for MLK on Monday, but they should be back in school for Thursday and Friday. We had appointments on Monday and Tuesday, so meals have been “off” regarding timing and who was hungry. That ended up working well as we went through quite a few leftovers. I’m planning to finish off all of the leftovers by lunch tomorrow, so tonight’s dinner will be porkchops from the freezer with leftovers and a salad as sides.

Brunch – I had a smoothie & Ryvita with peanut butter and then after a long appt in town (which I almost missed due to a dead battery…grrr) I had my last roast beef sandwich and discovered 2 things. A toasted English muffin is a great “vehicle” for a small sandwich & the jar of maple mustard that I dug out of the pantry is delicious 🙂 T had a poached egg on cheesy toast and I think maybe some shepherd’s pie after I was gone.
In the afternoon, I repurposed the last of the roast beef into an Asian style noodle soup that used up lots of random bits of veg from the fridge.
By dinner time I actually was feeling really unwell and so the prep for last night’s stir fry got stored away for tonight and T had some of the soup I made…I just went to bed.

We always have French’s yellow mustard & Maille Dijon on hand but all the specialty mustards we have (many ordered online from Alberta) are Canadian mustards….most people don’t know this but Canada now exports more mustard seeds than any other country in the world, and is the world’s second-largest actual mustard producer as well. I love our home grown mustards 🙂

Lunch – grilled bacon and cheese sandwich, potato salad, pickles. (The sliced cheese I used needed to go away as it was getting a little old.)
Dinner – I pulled some already made Chicken tortilla soup out of the freezer. Just heat and eat.
Snack – pita crakers and some chive cream cheese that I forgot I had in the fridge. The date on it said March 2024 so I need to get to using it.
I am still working on cleaning out the fridge and have not used a lot out of the actual pantry and freezer yet. I also have been doing a lot of easy meals that don’t require much cooking this year…. It is good to get stuff out that needs to go though.

B: hubby grabbed a yogurt before heading to the gym, I had yogurt and granola followed by a Nutella bun
L: we decided to go out for lunch as our regular Thursday breakfast won’t happen this week. Hubby had grilled cheese and fries, I had a toasted western which was good but the soup to go with it was tasteless
S: beef stew from the freezer and Brussels sprouts

Day 16:
A great challenge day. Also planned out grocery shopping for Tuesday, which would be the first real shopping since the start (having only spent $16.66 so far.). And planned a few meals for the week, but once I’ve shopped and know what veg etc I have available (based on prices/what looks good), then I’ll plan out a few more.
B: L skipped/slept in; I had more toast w/cinnamon bun spread
L: L had yet another toasted turkey and pepperjack sandwich; I had crackers and cheese, both of which we have tons still.
D: very proud of this one: shredded beef tacos w/avocado lime crema, quick jalapeño pickled radishes, shredded lettuce. Beef from the freezer- shredded and already cooked from a vacuum sealed package several months ago who’s leftovers went into 3 ziplocs, have now used one- I added a carne asada spice blend my daughter gave me for christmas- and have leftovers from it- maybe beef and bean burritos for lunch later this week? Crema- found a really old avo in the fruit crisper and was able to salvage some of it w/some sour cream, lime juice, and seasonings. I guessed on the radishes and wow they were good, so I’ll be doing that again, and it used up the last 3 little radishes we had. In fact an exact replica of these tacos would be great. Luckily we had a package of small flour tortillas which i heated up in a teeny bit of avo oil. After dinner, literally a tiny bit of iceberg left and some carrots, baby potatoes, onions, and garlic. No other fresh veg at all, which makes me jumpy.

Sounds like a really good meal for supper. I had to comment on your pickled radishes. I work with a group of volunteers that preserves (jams, chutneys, pickles etc) to raise money for our local hospital. One of our ladies tried pickling radishes one day – just because she had a few radishes she had no plans to use. She brought them with her to our next local market (That’s how we sell our stuff) and they were a huge hit. That was a couple of years ago so now we try to always have a few available. Well done you!!!

Traveled home.
B: We picked up Panera breakfast. Not frugal but at least I did get and use a discount.
L: Fixed sandwiches- chicken (freezer)/Havarti (freezer)/apple upon return home plus pita chips.
D: dinner sausage (freezer), baked apples (freezer), baked sweet potato, mandarin
I bought a loaf of sourdough bread for the sandwiches. Spent 2.28 which brings my total to $11.42 for the month. Chicken goes off sale tomorrow, so I’m planning to buy a bit before it does so. I also need to pick up a few more items that are at a good price til tomorrow, especially since good buys are so few and far between these days. I keep hoping that my freezer and pantry can outlast the worst of the food inflation, but I don’t know…not looking good. I am ready for these high prices to start to decline! I read that it may be months before the egg prices abate. My egg stash can’t last that long!
Jessica, your egg debacle took me back to when my daughter (now an adult) was a toddler. I had come in from the grocery store, leaving the bag of groceries on the kitchen counter as my husband called me to see a story on the television. While watching, we heard this ch-ch-ch sound. Not sure what in the world the sound was, I went to investigate and found my 20-month-old daughter standing on a bar chair, methodically dropping eggs on my kitchen floor! I think she had already dropped 8 or so on the floor when I got to the kitchen. An interesting way to test gravity! In that case, my husband cleaned up the mess as well. I was just thankful she hadn’t found the other dozen in the bag! Still brings a chuckle now (not then!) after all these years:)
