Here we go with Day 12 of the Pantry Challenge!

I have really enjoyed Sundays since we started instituting a regular sabbath. Bryan and I started this last May/June and it’s really been a wonderful part of my week.
Friday and Saturday I did little bits of prep so that meals could be easy and restful. I haven’t quite figured out how to scale my meal prep for the rest of the week to be as fun and easy, but I’m enjoying my Wednesdays.
What We Ate
Breakfast – This Sausage Egg Hash Brown Casserole is my regular Sunday breakfast item, paired with some type of baked good. Last night I made this Blueberry Lemon Coffee Cake only I used a very ripe pear and some chocolate chips instead of the blueberries.
Lunch – A couple of days ago I pulled out ½ a large pork loin from the freezer. It was from 2023 ?. I thawed it and then prepped it for Spicy Pork Chili with Pumpkin. Getting it ready for the crockpot was so easy!! Definitely gonna keep this in rotation.
I also had prepped some mixes to make Buttermilk Cornbread. My daughter got home from church before we did, so she baked a batch for us to eat with the chili. I also had veggie dippers left from last night to serve.
Dinner – Sunday Dinner is a highlight of our week. I made a double batch of this recipe still in development. Instead of using fresh potatoes, I used southern style frozen hash browns this time. We’ll see how it goes.
I served that with the second loaf of sourdough bread I baked yesterday as well as a big salad. We had Portuguese Tarts from the freezer, a Costco find that is amazing!
How did Day 12 go for you?

We had the chance to see a friend’s son play college basketball. His away game from many states away was against our home team. So we grabbed lunch out with our college son before going to the game (and my youngest is the only one that came home with any leftovers). We only had about 10 minutes to talk to our friend after the game, as he was busy with the team his whole visit and they were flying out quickly. But, we hadn’t seen him in years, so it was fun!
Amongst much grumbling, we had chicken tacos and quesadillas for dinner after we got home. It’s normally a well received meal, but I don’t think anyone was in the mood. Oh well, I had prepped it a couple of days ago for dinner when I wasn’t home for the night and they didn’t eat it, so it needed to be eaten.

I haven’t posted in a few days, but we are still at it. I do shop for things like milk, yoghurt, fruit and veggies, simply because I don’t want to go without. But I can tell I am being more conscious about using things up and not buying more before we actually need it.
Day 10:
B: Oatmeal porridge for DD1, rye porridge for DD2, Greek yoghurt with HM granola for DH. I had some toast and coffee.
L: Packed lunch for DD1 (featuring LO Spanish tortilla), school lunch for DD2, DH skipped, I made a sandwich with some tuna mayo.
D: HM sourdough pizza.
S: Ice cream cones for movie night
Day 11:
B: Oatmeal porridge for DD1, Rye porridge for DD2, oats and milk for DH, Greek yoghurt and banana for me.
We were running out of the door for an early showing of Wicked. We loved it and even our almost 10 year old sat still for the entire film!
S: Popcorn and peanut MnMs at the movie.
L/D: Stopped at a cafe to eat on our way home. Lovely meal, but really pricey. Even the kids were a little shocked at the bill! Prices are going up and I am so happy we only eat out rarely and always budget for it!
Late snack: toast and LO Spanish tortilla for me. Christmas candy for DH.
Day 12:
Brunch: Soft boiled eggs, HM sourdough bread, coffee, jam etc.
S: Fruit and LO Christmas candy
D: Tortillas with refried beans and all the usual toppings 🙂
I made a double batch of dough for pizzas and shaped a little around half into a loaf of bread. It turns out like an Italian style bread – really yummy!
I turned some of the black beans into a big pot of actual refried beans and the rest into black bean burgers. I have two containers of refried beans to freeze and a lot of burgers. This means more food in the freezer but also easier meals in the future!
I think my oven is on it’s last leg, so I don’t know how much I will be able to bake. We are finding out if it’s worth it to repair it or not. The “normal” program still works, but the fan assisted one I usually use does not. Boo. We’ll see how it ends.

Yay for seeing Wicked this past weekend, like we did! What a fun Saturday you all had. Having those refried beans and bean burgers ready will be great. Despite putting back in the freezer, you also took out of the pantry and made food for a day you might not have much time to cook. Good luck with your oven!

I’m right there with you on the high cost of eating out. We met a crowd last week for lunch. By the time it was all over with, I felt like the cost should have been for a fancy dinner instead of the more casual lunch we had. We don’t eat out very often either.
I’ve noticed that here I used to get a salad with chicken for ~ $15-16. Now, here the base of the salad is $15 and the chicken may be $6-7 as an add on then plus tip. At that price, for me that salad better be one I can’t fix at home with some fancy ingredients. So I’ve become a pickier consumer as prices have continued to rise.
Glad to hear you all enjoyed Wicked. DH and I are planning to go tomorrow night. I’m looking forward to it!

That IS a pricey salad! It sounds like that price is comparable to Denmark, and we don’t have to tip, since it is factored into the server’s wage.
I feel like you – the food I eat out had better be something I can’t make at home for me to pay the price.
We did have fun, though, and it will be a long time before we go out to eat again 😉

Sunday was a good Pantry Challenge day. I guess that’s the one good thing about snowy weather. Buying more groceries and/or getting takeout/going out aren’t even options. Fortunately, we didn’t lose power, despite all of the warnings that we would.
Breakfast: We had some blueberries in the fridge that I had planned to have on NYE, but didn’t get eaten, so they really needed to be used. I made blueberry bread with those, which also used some of the AP flour I’m working my way through. I feel like this one bag is never-ending!
Lunch: Leftover baked spaghetti.
Dinner: Leftover chicken pot pie. I also had cranberry sauce b/c I love canned cranberry sauce and always stock up on it in November/December.

Thanks for the idea for blueberry bread! I have about two cups that have been in the freezer for quite awhile and I keep neglecting to use them. Blueberry bread sounds yummy. Off to google a recipe….

This is the recipe I used. One of our neighbors shared some with us a few months ago and said this was the recipe she used. She didn’t mention it being a problem, so it may just be my oven, but it took about 30 minutes longer to bake than the recipe said.

I made a loaf of bread yesterday using a mix of Canadian all purpose flour & bread flour which actually have very similar protein contents (thanks to our harder Canadian wheat). I am a bit low on AP flour but do have some bread, whole wheat & 00 flours on hand so my plan it to avoid shopping for AP as long as I can.
What we ate on Jan 12
Brunch: I had my steel cut oats early & a mug of the tomato soup in the afternoon. T found a can of tuna in the pantry so made a 1/2 sandwich and then later dug a turkey soup out of the freezer.
Dinner: It was just burgers (patties & buns from the freezer) with a small salad. While pulling out condiments etc T actually commented that it is getting easier to find things in the fridge so that’s progress 🙂
It appears to have snowed all night so it’s going to be a plow/snowblower/shovel day here today.

A quiet, church in the morning, stay home rest of the day kind of Sunday here(and watch NFL wildcards, too). Good Challenge day.
Brunch: made some eggs/egg white scramble(slowly working through those cartons of egg whites-does anyone know if they freeze well?) for L and I. He also had chicken breakfast sausage. C made himself a toasted turkey/cheddar on sourdough. I also had some stollen.
D: In the freezer I found a small package of thin tiny steaks I had bought on clearance(this is why the challenge lol)-like 1/2 lb total for 5 so tiny ones- and cooked them up after seasoning them well with montreal steak seasoning. The star of sunday dinner was the side: potato and green beans w/warm bacon vinaigrette. Had potatoes I need to use(still have enough for another meal) and cubed then air fried them(tossed in a bit of olive oil, s&p), lightly steamed frozen green beans, cooked up some bacon(I bought WAY too much for christmas breakfast) and lightly sauteed some chopped shallots in some drippings, along with a dash of brown sugar. After, added some dijon and cider vinegar, then a bit more olive oil, s&p and poured it over the potatoes, green beans, and crumbled bacon. YUM!
Snacks: me-tortilla chips and street corn dip, L-pistachios, C-cookies from the snack cupboard(that is one place that is seeing visible progress-open crackers, chips, nuts, sweets gone, etc). At least this is what I know was snacked on lol. Also seeing through this daily exercise I need to be eating more fruit.

I think egg whites freeze well. The post I came across said you don’t have to do anything special when you freeze them. For whole eggs you have to add a stabilizer-salt or sugar depending upon future use.

oh awesome! I may decide to freeze a carton or two. I also might decide to make meringues. But I do have quite a bit of work on my plate the next few weeks (I work part time remotely, but we are adding more responsibilities for me and a few bigger projects that will take more time, which means less to mess around in the kitchen)

Not the best day for the challenge but . . .
The weather was quite mild so we went for a long walk over to the curling club, hubby need to check on when he is ‘working’ this week. Stopped in at a favourite coffee shop on the way back home. Walking back up Main St one of the restaurants we passed had a sign out on the sidewalk, advertising their daily special, which was turkey melt and that just sounded good! No, we didn’t go in for lunch but we did go in to the grocery store to buy what we needed to make ham melts at home. As Jessica says, we make our own rules!!
B: hubby had yogurt, with toast and marmalade, I finished the English crumpets from the freezer with my yogurt
L: just having had lattes and a cookie for me and an almond croissant for hubby, we skipped lunch.
S: the aforementioned ham and Swiss melts. They were good – what can I say?

B-I found a box of Fisher scone mix so made those for breakfast this morning with raspberry jam and bacon
L-half an apple and peanut butter
D-chorizo sweet potato chili-This is one of our favorite winter meals! From the freezer I used a package of chorizo, frozen tomato paste, chicken broth, and some chopped yellow peppers. Also used a big sweet potato, an onion, three cans of beans, canned diced tomatoes, and spices.

I use the Budget Bytes website recipe and added an extra can of beans and the peppers. It’s a bit spicy, but we like that.

B: I had a boiled egg and some havarti cheese. DH had some ham sliders from the freezer. I think someone else mentioned they overplanned/ overcooked for Christmas. Same here. Those sliders were some of that. I do like to keep a pan in the freezer already stuffed with the ham and cheese, ready to add the topping and then bake. But I found 2.5 pans, so hubby ate some of them.
L: we both finished up the curried chicken over cauliflower rice, DH finished up the last of the soup
D: cooked some of those chicken thighs from the freezer with barbecue sauce. Added cabbage, lo pinto beans and fruit medley as sides.
S: tortilla chips
I cooked the remaining thighs in the crock pot with veggie add ins to make broth. I now have chicken for different meals, including soup for lunch, which was my main push to cook the chicken.
When I used to fix broth, I would add sliced carrots, celery and onion from my vegetable bins. Now, as I wash and prep those veggies for other meals, I put the carrot tops and onion peelings, celery ends, leaves and bits in a bread bag in the freezer. Then when I’m ready to make broth, I dump the bag of scraps in the broth. Those former discards season my broth (along with spices and vinegar for bone broth) wonderfully. Though we have a garden and compost, I feel like I’m getting more from these scraps and saving a bit of money this way as well.
I’m seeing space in my pantry which is great. Starting to see a bit of white space in the freezer, which I expect to increase this week. Slow, but progress nonetheless.

I have freezer chicken thighs in the refrigerator thawing for this week. I have a jar of Trader Joe peanut sauce in the cupboard so may use that with them.

A peanut sauce sounds yummy. We like the thighs. I usually debone some to have for recipes with boneless thighs which cook quickly and are moist. Me deboning them saves a good chunk of change too!
I hope the “scrappy” broth will work well for you. Whenever I’ve used the scraps, it still comes out a pretty, golden color and if I’m running low on actual veggies, they can save the day!

Tasty , it absolutely is! I chuckled when I saw that Jessica’s pork loin was from 2023. I can relate to that! I’m never quite sure what all resides in the depth of my small chest freezer!
Ham melts do sound good, especially with cold weather. One day my husband was checking lunch specials on line and a restaurant was having tuna melts on special. Like you, that inspired me to make our own tuna melts with items I already had!

I need to save those ends for the same reason- my freezer is always so full, though. After the challenge I might start doing that. You had a great day! Also, can relate to the feeling of slow progress. I feel like i can barely see a difference, though places were overstuffed here and now they aren’t-they’re just full! lol. I see me being very intentional with food purchases into February so I can keep clearing out before slowly replacing.

Yes, I see me being intentional with my purchases for February too. At least you’ve got your son to help eat up food at a faster rate! I need some company to come to help the two of us! It’s definitely slow progress with the two of us. But still better than before. Progress is progress!

Lunch – the last burrito from the other day.
Dinner – Nachos. I used up a Ragu cheese sauce from the pantry that was dated 6/2023. Pulled out the fixings from the fridge – salsa, sour cream guacamole, the leftover refried beans, I also go out some pickled jalapeños that I had made during garden canning season – they turned out pretty good – first time I ever made those.

Everyone is showing signs of the dreaded winter cold. I don’t think anyone ate breakfast. I cooked up a couple of packages of chicken from the freezer and made a big batch of chicken noodle soup for lunch. We had the soup again for dinner with toast and small side salads. I think tomorrow will be another soup day. The temp is supposed to plunge with high winds. I’m thinking either ham and potato or turkey and dumplings.

Brunch – 1st off…the farro from Thursday night. While it was okay on the night I made it, after heating up 2 bowls yesterday, we both had a spoonful, made faces & said “nope” at roughly the same time. Apparently a night in the fridge made it very smooshey (my word) or slimy (T’s word). I really didn’t want to waste it but then T asked if the the point of the challenge was to punish ourselves and with that it was discarded. I felt guilty (!) but ate some beef barley soup from the freezer with toast and T had a poached egg on a toasted English muffin.
Dinner – I had unearthed some very frosty little ham steaks, and so chopped them up to make our all time favourite soup – Cheddar, beer &, ham. We love it but I don’t make it often as it is very rich (and oh so delicious). We ate it with some rye toast and declared it a big win 🙂
The snow fell hard all night and is supposed to continue until late this afternoon, so we have hard work ahead of us today !

B: avocado toast for me, cereal for DH
L: made Jessica’s cranberry chicken salad, substituting turkey for chicken. It’s really good. The dressing makes it! We had that for lunch plus soup.
D: bean burritos using up beans I had in the freezer, with lettuce ,sour cream etc to go with them. We had raw carrots, cukes and pepper strips with ranch dressing also.
I think I had about 10-12cups of leftover turkey in the freezer. Thanks to our turkey marathon eating, we’re down to about 4cups with growing space in the freezer.
I’ve realized that much of the proteins that I have are large cuts-like the turkey, a ham and a pork butt. I have a few smaller options which I’ll be using as I don’t want to use those big cuts unless there is someone else here to help us eat them. So we’ll see how the rest of the month progresses.

We don’t have Trader Joe’s but Publix makes similar chicken salad. One of my mother’s friends had brought her some and it was very good. But I think your dressing is what makes the hm much better. I’m deciding that I like cranberries more and more!

Day 2 of back to work and I was definitely tired.
B – muffins for dh and ds, I had breakfast at school for free
L – leftovers for dh with fruit, I took another snacky lunch – where I just threw randomness into my lunchbox and called it good – yogurt, fruit leather, mini beef stick, mini peppers
D – I was so not wanting to cook. But bus duty was a wild weather one and I was drenched when all was said and done. I was not going back out into the weather. So I made a homemade pizza and sliced up a pepper

S:tomato soup I made and canned back in the fall with cheese bread. The plan had been to make a turkey pie with turkey from the freezer but we were out in the afternoon and it was fairly late when we got home so time to change the plan.

Heather, I have always liked tomato soup – even the bought stuff in tins. About 20 years ago I came across a recipe for said soup that really has very little else in it other than some seasonings. The flavour is out of this world and at that time we always were looking for something to do with garden tomatoes. A match made in heaven!
Eve tho I have to buy the tomatoes now that we have moved into the condo, I still make the soup.

Tasty, re: your turkey pie…with all of our turkey eating, we’re about turkey-ed out! But our son called and asked us to come and help baby sit the grand baby. (Couldn’t say yes fast enough!)
So, I pulled out a bit more of the LO turkey and made a turkey pot pie for next weekend. The high is going to be 32, so I figured that would be a warm comfort food. By next weekend I’ll be ready to eat more turkey! I’ve got some soup in the freezer that I can take with me as well. His wife likes soup a lot so I can take that to leave for when she gets back in town. It will make a dinner/lunch easier for them and get a quart out of my freezer.

Lynn, have a great time babysitting. Is your son far from you? We enjoyed the turkey pie tonight. We didn’t cook a turkey at Christmas this year and I suspect the turkey we ate tonight could have been from Christmas 22 or maybe I cooked a turkey in the spring! But we certainly were not turkeyed out this year. We have enough for supper on Monday or Tuesday. It really was a win/win – it used turkey from the freezer, bought pastry, some leftover peas in a white sauce, fresh carrot from the fridge and a can of cream soup from the pantry.

I am down to about two meals with leftover turkey in the freezer. I found a box of stove top stuffing in the cupboard so plan to make a second Thanksgiving of sort. And since I have some frozen mixed vegetables and more crescent rolls I think a turkey pot pie will finish it off. Thanks for the idea!

Jan 12: another quiet day for me, a little cleaning, reading, etc. The vertigo is way way better. Finally. Resting as much as possible. has been the right move. But I’m done with that, lol. L last minute was stuck late at work again(this world….too much happening and it keeps him working). Just got home about 11:15pm. I did cook what I had planned to for the 11th cuz I had to cook the defrosted chicken. And I used my brand new, and first, Le Creuset pot I got for christmas. I was very excited 🙂
B: L skipped; I had a couple of Christmas cookies (oops)
L: L took another salami/lettuce sandwich, apple, veggie sticks, and a Kind bar; I dug around and realized we only have one can of refried beans left(!! this is something I try to keep on hand) but I really wanted a bean burrito and wanted to save the lone can for later so I mashed a can of pinto beans with some enchilada sauce, used some small lo carb tortillas, a few diced onion bits, and cheddar and it was like mini Taco Bell bean burritos but better. Really hit the spot.
D: tried making arroz con pollo y gandules (a mashup of arroz con pollo and arroz con gandules, 2 Puerto Rican dishes), and it turned out really tasty, but I want to tweak it a bit more. Gandules are pigeon peas. I have a strong favorite food memory from when I was a kid and we lived in Puerto Rico- I loved arroz con gandules. This wasn’t that exactly, but it was tasty.
For the day, I got 5 things out of the cupboards, 1 and 1/10th things out of the freezer(1/10 being some frozen green bell pepper slices from a ziploc of mixed bell pepper I froze before traveling unexpectedly in September) plus used things from the fridge. Felt very successful.

He’s been back at work from being off for the holidays (though it ended up mostly being sick days) since a week ago Thursday and it’s been crazy busy. Anything to do with military, war, national security and he’s toast. It’s been too much already.

Heather, I try to do what you did. Before we head out of town-as Jessica always recommends staying on top of your fridge-I check and try to freeze anything that might not still be good when we return. Sometimes I’m more successful at it than others, but I do hate to waste food.

Managed to badly hurt my back so the days as may have mentioned have been a real blur of survival think since last post.
Day 11 kids made more nachos and rice bowls for brunch. I grabbed some hot chips as forgot to grab food to take.
Dinner : kids mix and match skillet using random fridge ingredients. Cabbage,carrots,Salad dressing pouches, cheese and 2 sausages and rice. Hubby had pita pocket pizza/nacho open grilled sandwiches. I made a mash up of leftover caserol,leek and potatoe soup and red capsicum and cooked pumpkin. Not tasty but Was food and cleared out some of the freezer odds and ends
we have made sone head way . Day Yesterday i skiped lunch and breakfast as forgot to take with me to work.

Day 12: b:I managed to skip breakfast and lunch again.kids made cheesy rice and corn chips with tomato sauce.
D: skillet noodel Dish with ham,pasta, carrots mixed herbs.
I pulled out a venison. Roast to defrost for Sunday. Ideal is to por roast it with Thai curry paste and coconut milk.
I’m observing that when mum is out of action the veg and fruit intake decreases dramatically. Praying that next week I’m on the mend and better nutrition will be more easily available.

B-eggs, bacon, toast
then I had to pick up a sick little grandkid from school so we just basically grazed
L- GK really felt that nutella and ritz cracker “sandwiches’ would make him feel better so he had that and we also later had apple slices with cheese
D-I made bread dough in the bread maker, then baked it in a loaf pan (my preferred way) I had a leftover meatloaf/fresh bread sandwich, husband had leftover soup and bread. We are close to eating all of this week’s leftovers.
I also had a months old package of phyllo dough in the freezer so made an apple strudel using canned apple pie filling. The phyllo did taste a bit stale but we did manage to eat it. And I did get rid of two older items.

Work day for me which means I am gone 13 hours and hubby is in charge of feeding all the people. I saw pots and pans out so he must’ve cooked something, lol.
I had yogurt parfait…I think we have enough granola for another month’s worth! Then mid-morning a LO breakfast pastry-something from the Korean bakery…it had cheese, eggs, and onion for sure but not really sure about what else.
LO chicken rigatoni and a cookie for lunch.
Dinner was sliced cucumber with balsamic vinaigrette and a cookie.

Our fridge is empty! Or so it seems. Lots of space.
B – bagels for all – I had 3 open bags and lots of partial cream cheese containers. Served with strawberries – on their last leg for sure, but we keep finding good enough to eat anyway
L – I had a salad, dh had leftovers – still home sick though. Dd had a veggie/lunch meat wrap
D – kids were gone and I had a 6 pm appt. I put a frozen pizza in the oven and ate quickly at 5 before leaving. I also sliced a cucumber up

Catch up from days 11-12.
Day 11:
I have no idea what L ate all day; he did eat with the family after a funeral he attended-he’s dealing with several deaths of people he was close to from different periods in his life, also people I didn’t know at all or had only met a few times.
I ate that lime jello I unearthed, drank a lot of water, etc., then started the icky prep at dinnertime.
Day 12:
No idea what L ate until dinner, when he finished the soup I made the other night and snacked on ice cream and the last of a box of Trader Joe’s peppermint joe-joe’s.
I continued prep in the morning, spent the afternoon having the oscopies, then we picked up a subway sandwich for me on the way home. I only ate about half of it and had a little ice cream
Definitely saw things in both oscopies. It’s going to be a while before an official diagnosis since I can’t even see the doc again until later Feb. But it was enough, along with other recent history, to have an idea of where it’s headed. Luckily nothing like cancer. But not awesome, either, if it does prove out. Eh. At least I have time to get used to the idea before it’s real and more meds/changes are needed. And at least it’s not all in my head (even though not absorbing nutrients is kind of a big clue it’s not all in your head lol).
