My Freezer Cookbook - Revised & Expanded | Good Cheap Eats

Pesto Penne and Cheese

Freezer meals have saved my bacon on more than one occasion. Just last week when I heard from a friend who was struggling, I was able to throw a meatloaf and a pan of mac and cheese in a grocery bag (along with salad fixings, ice cream, and cookies) and provide dinner — without stressing out or running to the store for something extra.

Right there. In that moment? When I could be generous and helpful without worry? That was a crucial moment for me. If those two items hadn’t already been in my freezer, I might not have made the offer. And I would have felt bad about it.

Freezer meals helped me be my best, without hesitation. #baconsaved

There’ve been plenty of other occasions when I’ve been super thankful to have some frozen assets. Let me count the ways:

  1. When I’m sick and can’t cook.
  2. When I’m too tired and don’t want to cook.
  3. When I’m heading out on a date with my husband, leaving my kids to fend for themselves.
  4. Just because.

Those just because moments are crucial. They are actually what motivate me to fill the freezer each month with homemade convenience foods. I can do a little work when I have time and reap the rewards later.

Just because.

  • A methodology to adapt your own recipes for freezing
  • Gluten-free and vegetarian options
