Ingredients
You just need a few simple ingredients to make these Buffalo Chicken Quesadillas:
cooked chicken – You can cook the chicken however you like. I use shredded chicken breasts that I’ve cooked in the instant pot. You can also use grilled, poached, or baked chicken. You can even use leftover rotisserie chicken or leftover turkey. If you’ve got leftover spicy buffalo chicken, by all means use it.
cream cheese – I love the creamy texture that cream cheese gives to this recipe. If you prefer more gooey melted cheese, you can substitute Monterey jack cheese instead.
sharp cheddar cheese – Shredded sharp cheddar cheese is a nice way to add a little extra flavor to your quesadillas. You can also substitute blue cheese crumbles, mozzarella cheese, or Mexican cheese.
green onion – Chopped scallion gives a nice bite to the filling. You can also use red onion and/or fresh cilantro if you prefer.
hot sauce – Franks Red Hot is the traditional sauce to use in wings, but if you have another hot sauce, be sure to use it.
tortillas – You can use flour or whole wheat tortillas. For a gluten-free option use corn tortillas.
additional toppings – Buffalo Chicken Quesadillas are great with toppings and dipping sauces, such as salsa, guacamole, sour cream, homemade ranch dressing, blue cheese dressing, or extra buffalo sauce.
Step-by-Step Instructions
Here’s how to make these spicy quesadillas:
Preheat the oven to 350 degrees.
In a large bowl, combine the chicken, cream cheese, cheddar cheese, green onions, and hot pepper sauce. This goes really easy in a stand mixer.
Spoon the chicken mixture among the 8 tortillas, spreading on half of each tortilla. Fold over each tortilla and place on the baking sheet.
Bake for 15 minutes until the filling is hot and the tortilla is crisp.
Alternatively, you can cook the quesadillas on a hot griddle, turning once each side is browned.
Serve the quesadillas with toppings.
Leftovers are delicious reheated but the filling can also be used in place of cheese in nachos, burritos, tacos, sandwiches, pizza, and wraps.
