One of my favorite indulgences is to go for an afternoon tea at the local tea room. There my daughters and I feast on finger food such as mini quiche, tea sandwiches, scones, and pastries — not to mention an everflowing pot of tea.

But, with the cost of things going up and up and up, it doesn’t make sense to spend big bucks at the tea house when we can easily host our own at home, with tea sandwiches made ourselves, for so much less!
We’ve done it twice over the last few months and it’s been so tasty. These Cucumber and Cream Cheese Sandwiches are so simple, yet feel so special. Definitely recommend.

They are easy! It’s true; cucumber sandwiches are the simplest. Simply spread cream cheese or your favorite Flavored Cream Cheese mixture on sandwich bread sans crusts. Cut into rectangles and top with cucumber slices and a pinch of chives and Everything season.

Here’s what you’ll need to make Cucumber and Cream Cheese Sandwiches:
square sandwich bread – You can use whatever bread slices you like, such as whole wheat bread or white bread for this tea sandwiches recipe. However, I’ve found that Bimbo brand Large White Bread is perfectly shaped into squares to make nice tea sandwiches without their crusts or a lot of waste. Be sure to make croutons with the crusts you do need to cut off. Remember you can freeze bread that you don’t use.
cream cheese – I like to use plain softened cream cheese in this cucumber sandwich recipe, but you can use a favorite cream cheese spread if you prefer. Whatever you choose, you only need a few ounces. So be sure to search our recipes with cream cheese so you can use up the rest of the package. Cream Cheese Pasta is a great option!
Everything Seasoning – Just a bit of this everything seasoning blend brings lots of great flavor with very little work. Learn to make your own when you make our Everything Hamburger Buns.
cucumber – Fresh English cucumber is the best for these sandwiches since they have no seeds, hold up really well when sliced thin, and are generally in season all year-round since they’re often hothouse grown. Choose the longest one at the store since they’re sold per piece. Make sure it’s firm with no squishy spots.
chives – A few snips of chives or finely chopped scallion looks really pretty on these sandwiches. You can also use a favorite chopped herb as well.
Step-by-Step Instructions
Here’s how to make Cucumber and Cream Cheese Sandwiches:
- Cut off the crusts of the bread. Reserve these to make bread crumbs or croutons. Cut each slice of bread in half.
- Spread the cream cheese over one side of each slice of bread. Sprinkle with the Everything seasoning.
- Layer cucumber slices over the cream cheese on each. Sprinkle chives over the cucumbers.
- Serve immediately or chill until ready to serve.
FAQs
Spreading the cream cheese on the bread provides a layer of protection between the wet cucumber and the dry bread. Pat the cucumbers dry before adding them to the sandwiches. Any salt added will draw out some of the moisture of the cucumbers, so don’t make them too far in advance.
Ideally, you’ll assemble the sandwiches shortly before serving, however you can do the prep in advance. Trim the bread slices and bag them up. Slice the cucumbers, pat them dry, and store in an airtight container. Chop the chives. Assembly should go really quickly with these things already done. Cucumber sandwiches will still be “good” the next day, but they may be softer.
Open faced cucumber sandwiches are pretty fancy looking, but you can also make them with a top. Prepare as directed but add a top with cream cheese on the side facing the cucumbers.
