Two of my favorite splurge ingredients are Brie cheese and sundried tomatoes. Usually I buy both at Costco since that store offers the best price on these “gourmet” ingredients. Both flavors pack a lot of punch so you can stretch your ingredients investment over several meals.

Sundried Tomato and Brie Pasta
This pasta is one of the easiest on the planet to make. It’s an upscale mac and cheese that takes just minutes to prepare with cooked pasta, sundried tomatoes, and cubed brie cheese.

Ingredients
- 1 lb bowtie pasta cooked according to package directions
- 8 oz Brie cheese rind removed, cubed
- ½ cup sundried tomatoes (julienned) in oil drained
- ¼ cup reserved olive oil from the tomatoes
- salt
- black pepper
- ¼ cup Parmesan cheese (shredded)
- 1 tablespoon fresh basil (chopped)
Instructions
- In a large pot of boiling, salted water, cook the pasta according to package directions.1 lb bowtie pasta
- In large bowl combine Brie, tomatoes, olive oil, salt, and pepper. Allow to rest while pasta cooks.8 oz Brie cheese, ½ cup sundried tomatoes (julienned) in oil, ¼ cup reserved olive oil from the tomatoes, salt, black pepper
- Drain the pasta. Do not rinse it or allow it to cool. and immediately add hot pasta to the cheese mixture. Toss to coat and allow cheese to melt. Sprinkle Parmesan and basil over the top.¼ cup Parmesan cheese (shredded), 1 tablespoon fresh basil (chopped)
- Serve immediately.

Serving Suggestions: I like to serve this pasta with cooked veggies or a green salad. Be sure to pass the bread basket.

- Stir in chopped ham, prosciutto, cooked bacon, or cooked chicken.
- Fresh tomatoes can be used instead of sun-dried tomatoes.

double check your ethnic grocery store…i found my fave brand of Brie for $2.00USD instead of in my tiny {Key Food} regular grocery store at $6.00USD.
Also {same ethnic store} I found a HUGE package of fave chocolates: Merci at the $15.00USD instead of the tiny packages in my CVS at $6.99USD.
