    Wow! Last day? How did we get here?

    Yesterday I gave the fridge a good clean and it felt good to see so much white space. I also tidied the kitchen closet storage. Ready for a new month!

    What We Ate

    Breakfast – I made instant oatmeal before Bryan and I went out for a vacation day.

    Lunch – The kids had leftover soup. Bryan and I grabbed tacos when we were out.

    Dinner – Pizza night!

      Friday February 17th
      B – the usual fruit, yogurt and granola mix + a muffin each
      L- scrambled eggs on toast – lots of eggs to deal with
      S- we needed to eat early and neither of us was particularly hungry so we both snacked on what was available – mostly fruit and cheese

      I haven’t been posting but still going with the challenge! I also relaxed on tracking daily meals, and will instead just focus on using stuff up. My fridge and freezer are becoming quite bare (Yay!).

        Good for you! I’m jealous of your emptying fridge and freezer! Mine is getting a bit emptier, but not at a quick enough pace to suit me.

        Congrats on the nearly empty fridge and freezer. My fridge is getting there but that is mainly because of vacation in a few days and the veggies (carrots & onions) got prepped and frozen yesterday. Still have a few things to work on.

      I’m thinking our meals will be a bit strange over the next few days as we work to make sure nothing is left in the fridge while we are gone – it certainly would not be fit to eat come April!!!
      Thursday February 16th
      B – out to our breakfast haunt with 2 other couples. A lovely lazy start to the day. Certainly no lunch required by either of us after farmers sausages, eggs, hashbrowns and toast.
      S – the last of the corned beef, salad and smashed potatoes

      Well, I’m not sure where my comment went. So if this is a duplicate, I’m sorry in advance. I picked up strawberries, celery, creamers (on sale so stocked up), Springer chicken thighs for .70/# with in-store coupon, avocados and potatoes. My total for the month is now up to 151.57 and I still need a few more produce items and bread. I’m going to continue to be intentional with my purchases. The strict budget during the January PC has more than paid for the extras for this month’s celebrations, so I’m not sweating going over my budget again.

      We are planning another trip to see our granddaughter and I’ll be taking several meals for the family to enjoy while we are all together. My DIL says making food is my “love language”. I haven’t read that book, but she may be right. I’ve always thought of myself more like: “Meals on Wheels”. Eating at home to me can be more conducive for a group to chat than in some restaurants.

      B: DH protein shake, I had toast and sausage (freezer)
      L: DH out with friend, me yogurt
      D: pork chops (freezer), corn (freezer) strawberries, LO cabbage. last bit of slaw. That’s it for the (never-ending) cabbage, Heather.

        Lol the neverending cabbage, isn’t that the truth! I love that your love language is feeding people. You’re doing so well with spending, two months in to your challenge. It’s so little spent on food, really. And, you’re eating so so well. If we aren’t feeling deprived and also eating well during this, and not spending much, it’s the hugest win. 🙂

      It has been wild around here and I have a week to catch up on. I’ll try to be brief, but you all know that’s a trick for me lol.I’ll just update dinners at this point. Also, I have spent a total of $241. 23 this month so far. I don’t anticipate much more spending except on a bit of fresh produce and maybe bread or dairy. Half of that was at Costco where I went to pick up steaks on valentine’s morning. The package of gorgeousness was $41 of the $121 spend there. And we ate just over 1/4 of it and the rest in 3 bags into the freezer for 3 future meals. I chose well, the steaks were delicious! At costco I also bought snacks on coupon, grapes, bananas, bread, spinach, a rotisserie chicken, fancy canned tuna on coupon, and eggs! Our prices haven’t come down like elsewhere, still cheapest is at TJs at 3.99/dozen, or this at costco, $4.89/18- I bought 2 packages so we are well stocked. The other $120 I’ve spent is mostly produce, bread, dairy, a random clearance item, etc. We are quite stocked and i still need to clear things out of the cupboards and the freezer is doing better, though I’m adding things here and there (chicken and steak). Dinners:
      Feb 9: I was at a Galentine’s party with lots of food, L finished the quinoa casserole
      Feb 10: Sheet pan spicy sticky apricot chicken and asparagus over half cauli/half jasmine rice. Delicious!
      Feb 11: We went to a party! Sadly, L had to work during said party and stepped outside at least 3 times, incl when he went to the car to track a radio spot. These things in the sky. Sigh.
      Feb 12: Super Bowl! I made a delicious spread for 2: a big tex mex skillet with shredded beef, black beans, corn, lots of chopped zucchini, tomatoes, chilis, cheese, etc. So yummy and pretty healthy except the cheese. On the side: homemade guac, sour cream, chopped tomato, sliced olives and green onion, tortilla chips and corn chips. It was really yummy!! Sadly, L had to miss a chunk of the first half, an official briefing. So much going on.
      Feb 13: loaded Greek salad, L had the last shrimp burger on his, I had lunch out so kept mine smaller and lighter with only the garbanzos. garlic toast
      Feb 14: beautiful steak, rice pilaf(boxed- out of cupboard!), caesar salad with homemade croutons. Dessert: made brownies (out of the cupboard/recently past it’s best by date!) and a homemade tropical frozen yogurt using greek yogurt I bought last month, a bag of mixed fruit from the freezer (yay only mango, strawberries, and a small bag of blueberries I froze left!) which I chopped in the blender, some half and half, sugar, honey, and vanilla. no recipe. And it was great! seved with the heart shaped brownies and a little chocolate sauce. It wasn’t until 8pm, but at least we were able to eat together.
      Feb 15: homemade asian chicken salad (used the last of the cabbage, some romaine, carrots, cilantro, green onions, slivered almonds, rotisserie chicken, asian dressing, and i bought those wonton bite things you get with soup for chinese takeout so we can have our own.). I often will buy a salad kit for this meal but had all these ingredients so it was perfect and tasted so fresh and good!

        Aw..heart shaped brownies! That was creative and romantic 🙂 The rest of your dinner sounds great as well. I love an Asian salad myself. It’s one of my favorites. I also like a good Caesar salad since they are easy to make. I make croutons too and try to always have the parm and Romaine on hand. I will say it’s not my husband’s favorite, so I have to mix it up with him. I like Jessica’s pear and blue cheese salad, which we also eat frequently, though I tend to use apples instead of pears. I’m hoping my steaks are tasty like yours. I noticed that chuck roasts are 5.99/# this week on “sale” in 2 of the stores here! My rib eyes were just a bit more than that.

        I’m hoping that the skies will be clear and devoid of flying objects over Canada, Tasty, and the US as well, so L can have a bit of a break!

          He finally got the long weekend off, but then was gone all day and evening Saturday with volunteer commitments, so may as well have worked. And Sunday a lot of it too. Later afternoon we went for a walk, then out to dinner and chilled at home afterward. Monday we mostly stayed in cuz i was kinda wiped. We played games, listened to music, chatted, napped, etc. The recharge he needed (and still needs though, tbh… Tuesday 21st he got home at 8, worked through dinner and until 10:30-45; sigh).

      This past week has been so busy that I haven’t gotten on to post or read, but now I’m caught up. I need to get on more often to stay motivated. I don’t feel like we’ve made much progress, but I haven’t purchased much at the store or takeout, so we must be…it’s just not the random bits that I really want to get rid of. But, we’ve kept the fridge organized (a perpetual struggle) and not wasted much. We are going to be gone long days this weekend, but I’ll pack some snacks to get us through without much eating out. And next week my girls are off school for mid-winter break, so we are going to eat most lunches and snacks from the freezers. Today is a mix of leftovers for lunch and dinner. I also have some bread and rolls that we probably aren’t going to eat in the next 2 days, so I’m going to garlic butter them and freeze for garlic bread with future meals.

      February 14th:
      Celebrating Valentine’s Day over the years has been a series of misadventures for us (everything from food poisoning to snow storms), so we deliberately don’t do anything special for it now.
      Breakfast: Nick had oatmeal with blueberries and walnuts. I skipped. I brought oatmeal to work, but never had a chance to eat it.
      Lunch: I had leftover beef/garlic/veggie noodles. Nick never got a chance to leave for lunch so snacked on some crackers.
      Dinner: Bbq bean sandwiches, mac & cheese, and sesame cucumber salad. We also finished off some ice cream which helped make some freezer space.

      February 15th:
      Breakfast: Nick had peanut butter & banana oatmeal. I had blueberry almond oatmeal. We have SO MUCH oatmeal in the house. I bought more than we needed a while back when I didn’t realize we had more and Nick got oatmeal when I sent him to the store for grits. But, we finally finished off one of the cannisters of oatmeal yesterday.
      Lunch: Leftover garlic/beef/veggie noodles.
      Dinner: Leftover Bbq bean sandwiches, mac & cheese, and sesame cucumber salad.

        haahah all the oatmeal. We are the opposite right now, barely have any left. Trying not to replace it until I need more, even though it’s a good thing to keep on hand. At least trying to wait until March, since I don’t want to spend much this month and am already spending way more than January lol. Also, we usually just celebrate V day at home with a nice homecooked meal. It’s too much to go out with everywhere slammed, and before we had the kids around too.

        Danielle, with your misadventures for VD, I think I would skip it too. As noted, we didn’t have a traditional Valentine’s Day dinner-just something we liked that was in the freezer. And Heather, I agree-we’re fine to be at home without dealing with crowds, etc. We did eat off of special red plates, but nothing quite as fancy as Stephanie does!!

      Not too many of us left posting. I really find that posting almost makes me more accountable. I am trying to use everything that is fresh as we will be heading south for a few weeks and will need to make sure there is nothing left that could spoil.
      Wednesday February 15th
      B- Grapefuit 3pineapple mix for hubby and I finished off my apple3oat melange. It made a nice change but not an every day breakfast – I`ll go back to berries and yogurt, especially as I have some in the freezer.
      L – Salad
      S – butter chicken (from the freezer) and rice

          We`re certainly ready for a trip Heather. We have been home since halfway thru March 2020 when borders were shutting down etc. This is long overdue. Hopefully some sunshine and some golf would be nice.

        Tasty, I’m the same-I think posting keeps me accountable as well, especially as I total up the expenses! The few of us can continue to support each other as possible!

        Your trip sounds like a nice respite and well deserved. I was glad when my hubby and I were finally able to travel a bit ourselves. Enjoy!

          Feb 17
          B: I skipped
          L: out to lunch while out of town with my husband’s family (my husband and I grew up in the same hometown)
          D: at my mother’s that she fixed. She is QUITE insistent at 92 that SHE wants to fix dinner, despite my protestations. She’s pretty amazing. We will all head out of town to see our granddaughter so I’ve got meals for that, so it will all work out. This will be my mother’s first time meeting her first ever great grandchild! ? So I may be AWOL for a bit but will be back. (I think I forgot to post this entry)

          Feb 18
          B: ate before we hit the road to see grandbaby, toast for me, bacon and eggs for my hubby and Mother ate a Danish
          L: ate hm pimento cheese sandwiches we brought with us on the trip, snacks
          Got to see our little granddaughter who remains adorable. Mother was thrilled to meet her first grandchild at 11 days old. DD and SIL also arrived to join us.
          D: picked up food at nearby restaurant

          Feb 19
          B: some of us ate breakfast at the hotel, others ate the breakfast casserole I had prepared and brought for breakfast and/or brunch
          L: hm pimento cheese sandwiches, fruit from hotel breakfast
          D: We had the celebratory meal I’d brought including rib eye steaks, restuffed potatoes, asparagus, the LO strawberries sliced, from Valentines Day and cupcakes and cookies that I had had in the freezer for dessert. It all tasted good and was a hit. The steaks were thin but were especially tender. I figured we ate that meal for < $6/person for 7 of us. Not bad!

          Feb 20
          B: we ate in the hotel, DS and DIL ate more of the breakfast casserole
          L: hm pimento cheese sandwiches and fruit

          We left ? to head back to my mother’s and were so sad to do so. “Parting is such sweet sorrow”. I confess, I had to dry some tears. First my daughter and SIL headed back to DC which made me sad, then we left the baby, DS and DIL which made me even sadder. We already miss her so much. I had no idea this grandchild “thing” would be so emotional!

          D: ate LOs at Mother’s upon our return with some additional sides

          Feb 21
          B: toast
          L: ate on the road (Chick-Fil-A) while heading home. Did stop at Aldi while traveling (we don’t have Aldi) to pick up several loaves of bread (used to be 1.25/loaf, now 2.29 ? and a bag of navel oranges. Spent 10.06 for a total this month of 161.63.
          D: pancakes, sausage and orange slices for Shrove Tuesday/Mardi Gras

          Upon our return, a friend brought us some delicious sausage from a meat farm. We cooked it all up and put it…in the freezer of course! We like to do that so we then just take out a link and microwave it for a quick breakfast.

          Feb 22
          B: me-avocado toast, DH protein shake
          L: steak (freezer) sandwiches with Provolone cheese, mushrooms (freezer) and peppers (freezer), orange slices. DH added chips to his
          D: Honeyed Italian chicken thighs, roasted potatoes, green beans and orange slices
          S: unfrosted cupcakes from the freezer that I frosted with icing-from the freezer.

          I will need to be creative this last week as we are low on fruits and vegetables. I still have cauliflower, lettuce in the garden, oranges (my DH may be getting tired of them!), 1 banana, some frozen blueberries, mandarins (still oranges), broccoli and potatoes. Now that I’ve written all of that out, I think we will make out just fine in that area. Lunches may need to be creative. Going to try to finish strong here this last week of Feb. Alas, my freezer isn't down like I hoped.

      Happy Valentine’s Day! Since we are in a resort area, many/most of our restaurants shut down for the season. Pre-covid, some would reopen for Valentine’s Day, but no more. So, we were fine to eat a non-traditional Valentine’s Day dinner at home. I noticed that 8 chocolate dipped strawberries were 12.99 at the store. My berries were 2.50 for a whole pound with lots leftover. They may not have been quite as fancy as those at the store, but they were still good.

      B: sausage for me, last piece of pizza for DH-really.
      L: LO chicken burgers
      D: ribs, baked sweet potatoes, slaw, chocolate covered strawberries for dessert

        lol around here it’s busy on V day, but we opt to eat at home too. It’s just nicer? Love that you made homemade choc dipped strawberries! Much better deal!

      Feb. 13th:

      Breakfast: I had oatmeal with blueberries and almonds. Nick had a homemade hazelnut iced coffee.
      Lunch: Nick got Subway. I had a PB&J and chips.
      Dinner: Budget Bytes Garlic Beef Noodles. It’s supposed to be made w/ broccoli, but I don’t care much for broccoli, so I used some shredded carrots and zucchini that were past their prime.

      L: pizza for both of us. I managed to wrangle a piece away from pizza loving hubby.

      B: me toast, DH egg and toast
      L: LOs from last night’s dinner
      D/S: Super Bowl food: pizza, chicken wings (freezer), chips and dip/salsa, veggies and dip
      Oh goodness, I have blown my budget for the month! I had hoped to spend less than $100 but am now at 115.39. I got a great price on ribeye steaks. I bought a family pack to take to our son and DIL. I figured we’d have a steak dinner to celebrate our new little granddaughter our next visit (which we are already planning). Our DD and SIL may be joining us so lots of steaks! That, along with Super Bowl snacks, put me over. And I still need some basic veggies, fruits and a few other random items. As Jessica says, we make our own rules, so I’ll just be careful the rest of the month and hopefully finish with a bit leftover in the budget, and an emptier freezer.

        yes indeed making our own rules! I’m likely going to aim for $300 for the month, after spending $240+ already (nothing too frivolous either.. will detail on my update soon). We have piles of food now, but will need some fresh produce, bread, etc before the month is over. But not much at this point, lol.

      Sunday February 12th
      B – Hubby had granola and a muffin, I had an apple oatmeal melange that I found a recipe for online – quite good for a change.
      L – sausages on buns with onions and peppers – at hubby`s request. He rarely asks for anything so when he does I try to oblige. Sausages and the buns came from the freezer – of course. It also used up the last fresh pepper I had in the fridge.
      S – loaded potato soup. That really used lots of small containers from the freezer – 2 of stock and 3 of l/o veggies in a cheese sauce – not enough for another meal for us in any of them but too much to throw out! So I cooked potatoes, onion and carrots in some chicken stock and then added all the leftovers and blitzed it with the immersion blender, added some seasoning and cream. Topped with green onions, a little cheese and some bacon crumbles, it made for a pretty good soup. Of course, there is now 3 packs of it to go back in the freezer. It also used some of the potatoes that need to be used. Definitely consider that a win.

        Your soup sounds good. I made a potato soup recently. It was decent but I was missing not having any cream to add to it. That definitely takes it up a notch!

        Tasty, sausage with peppers and onions is one of my hubby’s favorites too. I try to keep some sausages, buns and peppers in the freezer to indulge him as well.

      Friday February 10th
      B – our usual
      L – scrambled eggs on toast
      S- out to a show at a local bar, featuring hubby`s friend singing.. a good night.
      We both had chicken – me with a salad, hubby on a bun with fries.

      Saturday February 11th
      B – fruit and yogurt
      L – Toasted cheese and bacon – this cleaned out the end of the bacon, the last of a block of cheese and the end of a loaf of bread – definitely a win/win.
      S – Cabbage rolls (from the freezer) the last of the broccoli and some baby potatoes cooked, smashed and roasted A little dish of ice cream . A good meal with very little work – gotta love it.

      Hope your new arrival is doing well Lynn and maybe even letting Mom & Dad get a little sleep. Heather, I`m sure things are hectic in your place too but for a very different reason. Strange times we live in these days.

        Oh Tasty, it’s been insane around here. L’s entire life taken over by these things in the sky. And still now, on Feb 16! Luckily he was able to steal away and get home for us to eat dinner on valentine’s day at 8pm, but the superbowl? sheesh. you’ll see in my update. and tonight he has an important volunteer meeting he’s going straight to and won’t be home until 9:30pm. And he’s gone all day saturday for the same reason

          Heather I can only imagine how crazy things are for your hubby these days. I don`t know what he does and I“m not asking – it`s none of my business. but I gather from odd comments you have made in the past, he would be involved somehow. My dad used to be a journalist in Fleet St and when `stuff` happened, he was busy.
          I hope for everyone`s sake, things calm down soon.

      Feb 7-9
      Eeek! Out of town with my new baby granddaughter ? ?
      I had the roast that my son had requested in the crock pot when the call came that they were at the hospital. We kept in touch and her labor wound up being long, into the wee hours of the 7th, so we waited and went the morning of the 7th. That gave me time to finish cooking the roast, make the potatoes, run to the store to pick up chicken and make another meal and make some snacks for while in the hospital. I needed to finish a smocked bib I’d made for the baby, pack for a few days, pick up medications, put food in the freezer, etc. It was a bit of a madhouse around here. The baby was going to be induced the end of next week, around the 16th or 17th, so that’s what we were all expecting, thus this was a surprise. She decided not to wait! We went for 3 days, got lots of cuddles and got them settled in at home before returning the night of the 9th.

      Feb 10
      B: toast for me, protein shake for DH
      L: BBQ sandwiches (pulled pork from loin), mandarins
      D: LO Baked chicken (freezer), cauli/rice with gravy, Asian salad with oranges, cabbage, pepper, chow mien noodles

      Feb 11
      B: yogurt with granola
      L: steak sandwiches (freezer) with cheese, mushrooms, peppers and onions, soup (freezer), DH picked up sub and also had soup
      D: Broccoli, cauli/rice and chicken casserole, Caesar salad, mandarin

          Feb 15
          B: DH protein shake, I had toast and sausage (freezer)
          L: DH out with friend, me yogurt with hm granola
          D: pork chops (freezer), corn (freezer) strawberries, LO cabbage. LO slaw. I’m now out of the never-ending cabbage, Heather. I’m going to eventually need to buy some more veggies. I did find .99/# asparagus though they only had 1 bunch left and also Springer Farms chicken thighs for .70/# with in-store coupon. I can’t remember if I’d reported my current total or not. I’m at 151.57 for the month. I had hoped to remain at 150, but that hasn’t happened, and I still need bread and some produce. I’m just trying to be intentional with my purchases, while still using up mostly what I have in the house. Our special occasions have expanded the grocery lists a bit. But what I saved last month paid for the steaks and the extras, so I’m good with that.

          Oh thank you Maureen! It has been wonderful. She’s a cutie for sure. I think the meals were helpful. I remember when I had my children, it was wonderful not to have to think about dinner, so I’m glad I could help in that way.

      Thursday February 9th
      B – our weekly breakfast at our favourite local brekkie place – has the best breakfast in town. Eggs, sausage, hashbrowns and toast for both of us.
      L- I skipped, hubby grabbed a banana
      S- shepherd`s pie using ground beef, onions and carrots from the freezer potatroes from the pantry. I bought a 10lb bag a while ago but they need to be used up . Shepherd`s pie was a good comfort food meal on a chilly damp day.

      Hello all. I’ve been MIA because our grandbaby girl came 2 weeks early! 🙂 We went flying out of town and have just returned tonight. I’ll try to catch up some of our meals tomorrow. She’s SOOO cute and we are thrilled. Looking forward to a good night’s sleep and then I’ll be back!

      I think I’ll start posting every several days instead of daily. This week has been busy so minimal cooking. I’m slowly working through what I have, and will plan a grocery order tomorrow since there are some good deals on stuff I need.
      B: overnight oats with almond milk and blueberries (all 3 days)
      L: ate at work (all 3 days)
      D: lunch leftovers and red bean soup for 2/7, instant ramen with cabbage and shrimp for 2/8 and today I plan to have chickpea and kale soup + dinner roll
      S: a piece of fruit everyday
