What’s On My Plate:

A family favorite meal at our house is Queso Fundido. It is one of the easiest meals I know how to make, especially since it’s freezer friendly. It’s best served with homemade corn tortillas. But, if you don’t have a hubby who makes them for you, that’s quite all right. Store bought corn tortillas will work just fine. Warm them prior to serving so that they won’t crumble when you serve them.

We’re having this tomorrow night. I’ve wanted to try it since I first saw it on your site. I finally remembered to add it to my menu plan/shopping list this last weekend.

I have been wanting to try homemade tortillas for awhile, I knew you made them but haven’t tried them yet.

This sounds so good, and is one of my favorite things! We live near San Antonio and I have always wanted to learn to make my own flour tortillas. My fear, I will be up all night eating them all by myself :) ~ LeslieMichele

We’ve been wanting to make our own Corn Tortillas but we’ve always bought those huge packs from Cosco. I bet my hubby would love to give this a try!!

We picked up tortillas at Trader Joe’s and my kids like using them for sandwich wraps. I’m not sure if my dh will like it as a dinner item, but it’s worth a try! Then I’ll know if I should spend time making my own.

Our eggplant is prolific this year, and I made eggplant parm this week for dinner. It turned out beautifully, and even hubby – a serious carnivore – asked for seconds!
