As I type, I’ve just returned from the airport where I dropped off my friend Amy. Amy is a wine blogger and world traveler. She was in town for a blogging conference and extended her trip an extra day so that we could hang out. We get to see each other about once a year, so it is a super special time.
You might remember the last time Amy came and we cruised by the French bakery and threw together some easy afternoon snacks. I knew we were going to want to do something similar after I picked her up yesterday.
I stocked up on cheese, crackers, baguette, and the fixings of a delicious Olive Bruschetta. Amy, of course, brought the wine.
We had such a lovely time visiting! Amy is the kind of friend with whom you can pick up where you left off. There’s no weirdness or apologies for not being in better touch. She’s a kindred spirit, for sure.
Afternoon snacking
I love preparing some kind of afternoon snack when we welcome friends to the house or even when my husband comes home from work. He’s been economizing on his work day breakfasts and lunches, so it’s nice for him to have a snack when he comes home.
I picked up Amy at 1:30, well, 1:45 by the time I navigated all the one-way streets of San Diego to get in the right place at the right time. She hadn’t had lunch yet, so she munched an apple on the way. Dinner was a few hours away, so an afternoon snack was called for.
A survey conducted by the California Olive Committee reports that:
• 93% of American snack on weekends
• 99% snack at home
• almost 100% want affordable and easy snacks
Our little Sunday afternoon noshing fit all those criteria.
Amy didn’t think she was a big olive fan, but I believe my bruschetta won her over. She even carted a can of olives home in her suitcase!
One of the things that will surprise you is that the green olives in this recipe are not your standard cured olives. Instead they are California Green Ripe Olives; they taste very similar to the black ones.
The process for green ripe olives is the same as black ripe, except green ripe olives are not exposed to air during processing. The flavor is just as delicious, but you get that pretty green color to add to your recipes. (You can find them in a can in the olives section of your grocery store.) My boys who don’t like cured olives were super happy to try the green olives! We’ve been snacking through the can like crazy.
This bruschetta is amazingly easy to pull together. Chop a couple tomatoes, slice a handful of olives and basil, stir in some garlic and olive oil, and voila! Deliciousness! It’s the perfect summertime snack and a must-make for your next party.
I ended up simply toasting the baguette instead of rubbing it with garlic and oil. It made for an easier preparation as well as a tasty olive-centric snack. I added a couple different kinds of cheeses, crackers, and snacking olives to the mix.
The bruschetta is delicious on toast, but we did some experimenting. It’s great on crackers or atop cheese spread on toast or a cracker. I’m thinking it would work really well over goat cheese, too.
Olive Bruschetta
Ingredients
- 1 French baguette sliced
- 2 roma tomato seeded and chopped
- 5 whole black olives sliced
- 5 green ripe olives sliced
- 2 tablespoon fresh basil (chopped)
- 1 tablespoon olive oil
- 1 clove garlic minced
- salt
- black pepper
Instructions
- Toast the baguette slices in a toaster oven or a broiler until light brown.
- In a mixing bowl, combine the tomatoes, olives, basil, olive oil, garlic, salt, and pepper. Stir gently to combine.
- Serve the baguette slices with the bruschetta
