What a coincidence! I made tortilla pizzas last night. I ran out of gluten free pizza crusts so I decided to try some GF tortillas I needed to use up. The only difference is that I added another tortilla to make it a bit sturdier to resemble the thickness of a pizza. First, I laid down a tortilla. Then, topped that one with mozzarella. Place the second tortilla on top of that. Then proceed with your toppings and bake or use a skillet on your stovetop. The cheese between the tortillas “glues” them together. If you want thicker “crust”, add another tortilla with cheese. Once it’s done, remove from oven or skillet and allow to cool a little so it’s easier to slice. It’s definitely a winner! Nothing too exciting on my plate. Just a loaded baked potato (a wee bit of butter, salt & pepper, cheese & sour cream.) It was yummy!

I love making tortilla pizzas! I do mine on the stove top. Toast the first side for a few minutes, then flip and throw the ingredient on and if your bottom is toasted by the time you get done, turn it off and put the cover on to melt the cheese. It’s delicious!! Thanks!
