This easy gravy recipe is the key to life. It comes together quickly and easily on the stove and is delicious on mashed potatoes, in pot pies, or a myriad of other tasty applications.
2cupchicken stockor other liquid, any combination of juicy drippings, stock, broth, milk, and/or wine
salt

Instructions
In a medium sauce pot over medium heat, melt the butter. Whisk in the flour and stir until well mixed, hot, and bubbly, about 2 minutes.
¼ cup butter, ¼ cup unbleached, all-purpose flour
Gradually whisk in the liquid, stirring until smooth. season to taste with salt and pepper.
2 cup chicken stock, salt, black pepper
Simmer until thickened, about 7 minutes, stirring. Add optional herbs if desired.

Serve hot over rice, mashed potatoes, or other favorite dishes.
Notes
Make ahead: Chill completely and store in the refrigerator for up to 4 days or in the freezer up to 2 months. Thaw completely and reheat on the stovetop, whisking to recombine.Variations: stir in sautéed onions or mushrooms, chopped fresh herbs, or adding cream or white wine to enhance the flavors.
