If using a canned chipotle pepper, chop it finely.

In a small bowl, combine the mayonnaise and chipotle chile (or ground chile). Stir well and refrigerate until ready to use.

Divide them into small airtight containers or snack-size ziptop bags and store in the freezer. Be sure to label and date them.
Lay out each chile on a sheet pan lined with a piece of parchment, distributing the sauce among them. Freeze until firm. Wrap up in the parchment and place in a labeled ziptop bag and store in the freezer.
