Remove the zest with a zester or microplane. Wrap the zest in a thin layer in a piece of parchment paper. Fold into a packet and store in a freezer bag in the freezer.
Juice the lemons and strain out the seeds. Store in an airtight container, 1 pint or smaller, depending on your planned uses. Juice can also be frozen in ice cube trays. Store in freezer until ready to use.
