Preheat the oven to 350. If using a muffin pan that needs greasing, spray it with nonstick cooking spray.
Beat the eggs in a large mixing bowl and season to taste with salt and pepper. Add the mix-ins. Stir well to combine.
4 egg, salt, black pepper, ¾ cup cooked quinoa, 1 head broccoli, 4 oz cheddar cheese (shredded), 1 green onion
Scoop the mixture into mini muffin pans. Bake for 20 minutes. Remove to a rack or platter and serve.

Other veggies can be used instead of broccoli. Try sauteed bell pepper, onion, shallots, leeks, kale, spinach, and/or asparagus.
To Make a Meal Prep: I often prepare this dish in plastic meal prep dishes for easy breakfasts or lunches during the week. Prep the recipe as directed, allow the steam to blow off. Divide the bites into 4 to 8 servings. Cover and chill until ready to serve. Consume within 4 days.Freeze Extra for Later:To freeze: allow the bites to cool completely. Wrap, label, and chill in the refrigerator until very cold before storing in the freezer.
