Preheat the oven to 475°. Grease a 12-inch pizza pan with nonstick cooking spray.
Presumably, you’ve made your pizza dough or bought it at the store. Line the pan with the dough. See this video if you need to see it in action. Brush the dough with a bit of olive oil.
Sprinkle the frozen potatoes over the crust. Sprinkle the bacon over the potatoes. Add the red onion, to taste. Divide the Brie cubes around the pizza. Sprinkle the shredded cheese over all.
Bake the pizza for 8 to 10 minutes, watching for burning. The crust should be crisp and the cheese hot and bubbly. Serve immediately, but leftovers are great cold the next morning.
