This Cucumber and Cream Cheese Sandwiches recipe is super simple with just a few ingredients: sandwich bread, English cucumbers, cream cheese, chives, and Everything Seasoning.
Cut off the crusts of the bread. Reserve these to make bread crumbs or croutons. Cut each slice of bread in half.
8 slices square sandwich bread
Spread the cream cheese over one side of each slice of bread. Sprinkle with the Everything seasoning.
2 oz cream cheese, 2 teaspoon Everything Seasoning
Layer cucumber slices over the cream cheese on each. Sprinkle chives over the cucumbers.
1 English cucumber, 2 tablespoon chives (chopped)
Serve immediately or chill until ready to serve.
Notes
Promptly store leftovers in an airtight container in the refrigerator, for up to 1 day.Nutritional values are approximate and based on 4 slices.Fresh English cucumber is the best for these sandwiches since they have no seeds, hold up really well when sliced thin, and are generally in season all year-round since they're often hothouse grown. Choose the longest one at the store since they're sold per piece. Make sure it's firm with no squishy spots.
