Use up sourdough bread that might be near its end in this tasty Sourdough French toast, accented with honey for just the right balance of tang and sweetness.
In a shallow dish, mix the eggs, milk, honey, and salt.
2 egg, ½ cup milk, 1 tablespoon honey, ¼ teaspoon salt
Heat a skillet or griddle and grease with butter. Dip the bread slices in the egg mixture and place on the hot cooking surface. Cook for 1 to 2 minutes until crisp. Flip and continue cooking until crisp on the second side.

Serve with butter, honey, and berries.

Note: You may need to make extra custard, depending on the absorbency of the bread. Our testers found that sourdough didn't absorb as much as other breads. Cool the toast completely on a wire rack. Place in a single layer on a baking sheet and place in the freezer until firm, about 2 hours. Once firm, wrap, label, and place in a zip-top bag and return to the freezer.To serve: When ready to serve, place in a 375° oven on an ungreased baking sheet. Heat until hot, 8 to 10 minutes.
