Spiced Pear Cake

  • 1 1/4 cups unbleached all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon lemon or orange zest
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/2 cup 1 stick butter, softened
  • 3/4 cup plus 1 tablespoon sugar
  • 2 large eggs
  • 1 teaspoon vanilla
  • 2 to 3 large pears peeled, cored, and cut into 1/8ths


  1. Preheat the oven to 350°. Grease a 9-inch springform pan.
  2. In a large mixing bowl, whisk together the flour, baking powder, zest, 1/4 teaspoon cinnamon, salt, nutmeg, and ginger.
  3. In another large mixing bowl, cream together the butter and 3/4 cup sugar until light and fluffy. Add the eggs, one at a time. Blend in the vanilla.
  4. Add the flour mixture and blend until well combined. Do not overmix.
  5. Pour the batter into the prepared pan. Place the pear slices in a circle around the surface of the cake, spacing about 1/2-inch apart.
  6. In a small bowl, combine the remaining 1/4 teaspoon cinnamon and the 1 tablespoon sugar. Sprinkle this mixture over the pears.
  7. Bake the cake for about 30 to 35 minutes or until a tester comes out with a few crumbs attached.
  8. Cut around the cake to loosen it from the sides of the pan. Release the sides of the springform pan. Cool on a rack.
  9. Cake can be served warm or at room temperature.
