Instructions
In a large nonstick skillet, heat the oil until shimmering. Add the onion and sauté for five minutes.
Add the peppers to the pan and cook for another 5 to 7 minutes until the vegetables are tender. Season to taste with salt and pepper. Remove the vegetables to a dish and cover to keep warm.
Add the chicken to the skillet and season with the cumin, garlic, powder, and oregano. Cook until done, tossing frequently, about 5 minutes. Add the vegetables back to the pan. Adjust the seasonings and serve with tortillas and toppings
