You'll need: butter, sugar, an egg yolk, vanilla extract, flour, rolled oats, salt, and jam. Use whatever jam you have.

The cookie dough comes together quickly in a food processor -- or you can use a pastry blender or two knives to make the shortbread.

Roll the dough into balls, make a thumbprint in them, bake, fill with jam, and bake again. Cool on a rack -- if you can wait that long!
