These Chocolate Mint Brownies taste almost like a Girl Scout Thin Mint Cookie with their layers of mint and chocolate!

You'll need: flour, sugar, eggs, cocoa powder, vanilla, salt, butter, powdered sugar, peppermint extract, half and half, and chocolate chips.

Make the brownie layer and allow it to cool completely on a wire rack. Lining the pan with parchment makes for easy clean-up!

Prepare the peppermint buttercream and spread this over the cooked brownie layer. You can add green dye if you like.

Add the chocolate chips to melted butter and allow it to cool to room temperature. Pour the glaze over the buttercream and spread to coat.

Chill for at least an hour prior to serving so that the glaze firms up. Then slice into squares and serve!
