In a food processor fitted with a metal blade, puree the plums until very soon. Add the honey and vanilla extract. Adjust sweetener to taste.
6 plums, ⅓ cup honey, ½ teaspoon vanilla extract
Pour the mixture into ice pop molds. Freeze until firm.
Once firm, remove from molds. You may need to run the mold under warm water for a bit to help it loosen from the mold. Serve immediately or store in the freezer.
