Preparing a Roast Chicken at home doesn't have to complicated or require fancy tools. Enjoy this traditional comfort food every week with this simple method.
Preheat the oven to 375°. Place the chicken in a roasting pan.
Slice the stick of butter into pats. Season the pats generously with the seasoning mix. Slide these pats under the skin of the chicken.
Stuff the cavity of the chicken with the onion, carrots, and herbs. Truss the legs.
Spread the outside of the chicken with enough olive oil to coat, about 2 to 3 tablespoons. Season to taste with salt and pepper.
Roast the chicken for 1 ½ to 2 ½ hours or until the meat reaches an internal temperature of 165°. Remove the chicken to a cutting board for carving.
