Place the potatoes in the crock of a slow cooker. Add the oil, garlic, salt, and pepper.

Cover and cook for 1 ½ to 2 hours on HIGH or 3 to 4 hours on LOW.
Adjust seasonings and garnish with fresh chopped parsley, if desired.

You can make these potatoes in the instant pot on the slow cooker setting.
Or to cook them more quickly, add 1 cup water and place the potatoes in a steamer basket. Set the machine to manual for an 8 minute cooking time. Release the pressure immediately.
Variations
Sprinkle the crock pot potatoes with fresh parmesan cheese.
Add peeled pearl onions to the pot with the potatoes.
Serve the potatoes with Dill Dip or plain sour cream for a fun appetizer.
