Ingredients

baked and diced

bell pepper (any color)

Instructions
In large skillet heat oil until shimmering.
Add the potatoes, onions, and diced pepper. Cook, stirring frequently until the onions and peppers are tender and the potatoes are lightly browned.
Season to taste with salt and pepper. Serve hot.
