Today was a kitchen day! After weeks feeling chained to my computer, I finally got some time to putter in the kitchen.
I woke up early after tossing and turning for hours and got the sourdough bread sliced and in the freezer and boiled and baked off the bagels. I’d love to share the bagel recipe but they were tough. Need to do some trouble shooting.
I also reshot photos for some recipes while also making
- chicken stock in the slow cooker
- a double batch of Cream of Chicken Soup
- a Single Crust Pot Pie with Chicken
- a Chicken Enchilada Casserole to freeze for the weekend
This used up the chickens I roasted on Sunday and will provide for future soup nights. I was pushing it on days in the fridge but I think it will be okay. I probably won’t pull the chicken stock or the casserole from the freezer until right before using them. I tend to be a stickler for the 4 days in the fridge thing.
Our meals for Day 28:
Breakfast: Bryan had his oats before he left for work. The kids had bagels. I made a bagel breakfast sandwich.
Lunch: a mixture of leftovers, snacky lunch, burritos
Dinner: Bryan and I went out to Ty’s Burger House for a date. We haven’t done that in months! The kids had the Chicken Pot Pie I made, except for my daughter who eats vegan; she had some tacos.
Only three days left! Tomorrow is Bryan’s birthday, so we may go out for another meal. He’s undecided. But, pizza is definitely on the list.
