The end is in sight, folks! One more week to go! This month has been fairly painless — except for those frozen meatballs — and I’m pretty thrilled with our progress so far.
That said, there’s still one lap to go, so we’ll see how this race ends next weekend.
Today was a computer day for me, so I made sure to make Easy Slow Cooker Chili first thing in the morning. That way, everyone could serve himself when s/he was hungry. I made it vegan so everyone could enjoy it.
For my part, I had some of the leftovers from Thursday night. With one or both of the college boys gone most nights, it’s hard to nail down the right amount of food to make. They were both gone that night, so there was actually leftover gyros, not a norm around here.
I had planned to grill burgers, chicken legs, and fish for dinner, but ended up baking the chicken, frying the burgers, and leaving the fish for tomorrow.
To make my meal prep stuff easier tomorrow, I ran to ALDI — in the rain. If you know SoCal, you know this is not something we do. LOL. But, having the basics in house and ready to prep tomorrow is worth it. And it didn’t pour, so all fine.
I ended up spending $62 which brings our monthly total so far to $485. My goal was $600, so it appears we will make it.
It is possible that I’ll need to go get something, but for now, I think we’re good.
Our meals for Day 23:
Breakfast – the usual: oats, Greek Yogurt With Muesli, etc.
Lunch – Chili or leftovers
Dinner – Burgers, chicken. Leftover couscous. Green salad. Veggie dippers
