10 Summer Salads | Good Cheap Eats

Enjoy this filling, yet easy and refreshing bean salad this summer. Bean salads are a perfect addition to summer suppers. Not only are they typically served chilled or at room temperature helping you avoid a hot kitchen, but they are super filling so that you know folks won’t be hungry ten minutes after supper’s concluded. Turkey & Black Bean Tacos

I’ve been on a ground turkey kick. Part of it is an effort to reduce our red meat. It’s probably not that good for us to eat it as often as we were, plus it’s getting more expensive. I just can’t swing it when the kids could easily eat two to three pounds in one sitting. We’re enjoying it twice a week, which is good.

I didn’t used to like ground turkey, but since I tried Trader Joe’s, I’m hooked. (Sorry to all you people who don’t have TJ’s or don’t like it. I fell out of love with Trader Joe’s a few years ago, but I’m finding ways to make their products and prices work for me, and it’s working really well.)

Anyway, this dish is the antithesis of what I would have made five years ago when I was a sworn beefeater.

Crockpot Chili Bean Soup

Spend ten minutes prepping tonight’s dinner. This crockpot chili bean soup is a crowd-pleaser. Things are starting to heat up now that April is well under way. I got a bit of a sunburn at Legoland earlier this week. Summer approaches! Warm weather aside, I still have been firing up the crockpot, particularly for those […]

Healthier “Refried” Beans

Cook up a pot of healthier “refried” beans to serve as a side dish, to fill burritos, or to top nachos. Traditional refried beans are cooked pinto beans that are mashed and fried in oil, often times lard. They are uber-tasty when made homemade; mediocre when they come in a can. But, beans in any […]

Easy Slow Cooker Chili

This Easy Slow Cooker Chili really is easy. Cook up meat and onions, open some cans, dump some spices, and walk away. I’ve been leaning on my slowcooker a lot lately, particularly for soups and chilis. These are recipes that lend themselves well to slow cooking and allow me to do other things while they […]

Healthier Chili Cheese Fries

Make Chili Cheese Fries a little bit “good for you” with homemade chili, oven fries, and shredded cheddar. When I was in high school, chili cheese fries were a staple of life. Our high school cantine offered french fries, slathered with movie theatre-style cheese sauce and canned Hormel chili. And honestly? I loved it. I […]
