Lemon Sundae In A Martini Glass

Do you love lemon? Meringue? Ice cream? Well, you’re in for a treat. You can combine all your favorite flavors in one delicious dessert that will have your guests begging for your secret.

Lemon Meringue has always been a favorite flavor of mine. I learned how to make Lemon Meringue pie when I was ten, and the process of baking — and eating — that pie is still one of my all-time favorites. However, sometimes, you just don’t have the time or the inclination to bake a pie. I know, it happens.

When we were in England last spring, one of our favorite restaurants to visit was Zizzi. It’s an Italian chain with locations throughout Great Britain. We became regulars, wherever we went, if there was a Zizzi, we went. It was a welcome change from hotel picnics and chip shops.

My family and I pretty much have the Zizzi menu memorized. One of my favorites was the amazing Lemon Meringue Sundae. I’ve been meaning to recreate it for months. I finally did and it is just as good as I remember.

The Lemon Meringue Sundae is pretty easy to pull together. Layer vanilla gelato with lemon sorbet; add crushed meringues, lemon curd, and whipped cream for toppings. Zizzi uses whipped mascarpone, but how many of us really keep mascarpone on hand?

If you don’t have time to bake your own Lemon Meringues, no problem, just substitute commercial, store-bought meringue cookies. I promise you this is the perfect reason to celebrate!

How To Make Lemon Meringue Sundaes Good and Cheap:

To make this recipe more economical:

  • Stock up on ingredients when they are on sale. The holidays are a great time to stock up on baking ingredients. You may even find meringue cookies on clearance. Ice cream tend to go on sale fairly often; I usually buy several flavors at one time and stash them in the freezer.
  • Bake your own cookies. Meringues take basically eggs and sugar. Likely, they’re cheaper to bake at home.
  • Note: it was incredibly difficult for me to find Lemon Sorbet. I only found one brand in one store. I don’t know if that’s a regional thing, but snatch up whatever you find. You could also substitute another citrus sorbet for a similar flavor.
