Meal Planning: March 25 – 31

Get your meal plan on so that there’s one less thing for you to think about this week.

In the immortal words of Calvin, “the days are just packed.” And while my family is trying to simplify, dejunk, and otherwise stop and smell the roses, feeding a small army of eight can be a lot of work. Meal planning in advance helps me so much to get my head on straight, to shop wisely, and eat well.

Here’s how we’re doing that this week:

  1. That guacamole looks yummy! I bought some avacodoes this week and plan on making some for our taco night. After a few busy weeks I’m finally getting back into the swing of menu planning. Here’s our plan for the week.

  2. I’ve just gotten back into the habit of planning our meals. I’ve created a board on pinterest to pin my menu for each week. I love having a visual of my menu each week.

  3. Here’s our menu for this week:

    Sun – dinner at family’s house
    Mon – baked chicken (seasoned w/homemade ranch dressing mix), sun-dried tomato & garlic spinach risotto, honey ginger carrots and cheesy garlic bread
    Tue – leftovers
    Wed – spinach ravioli w/pesto
    Thu – leftovers
    Fri – homemade pizza (everything from scratch!)
    Sat – grilled asian apricot chicken, veggie x2 & probably homemade biscuits

  4. We haven’t been hugely creative this week sticking mainly with easy recipes but we did try a new one.
