Something quite interesting has taken place in our household since we started to really watch our grocery spending. We went from eating red meat almost every single meal, to enjoying meatless meals and poultry more often. I used to be a boneless skinless chicken breast snob, but there was no way that was going to continue to fit into our tight budget, so I’ve had to overcome my fear of bone-in chicken and enjoy it for all of it’s uses.

After barbecuing our dinner one evening, we were looking for things to add onto the grill so that we didn’t waste the precious charcoal. I had a whole chicken in the fridge for later in the week, so we decided to lightly season it and cook it up. Out came the best chicken we’ve ever eaten! It had a smoky flavor that really added an additional pop to our favorite chicken salad!

  2. Oh, yum! Chicken salad is one of those simple recipes that just tastes SO GOOD. I’m always looking for easy recipes to use leftover shredded chicken, so I’ll probably come back in the next couple of weeks for a refresher and I’ll be making this for a yummy lunch!

  6. I fell in love with procuitto more specifically jamon (the french version of procuitto) while in high school and college. At first look it appears expensive but it is so flavorful you only need to use a little.
