Pantry Challenge 2011: Days 24 & 25

Apparently, I need to do a Pantry Challenge twice a year. Last night’s ground beef was dated July. It was fine when cooked, but I had no idea I had had it for so long.

Other strange things I have found: one lone piece of baguette, several bags of chicken bones that I never made into chicken stock, a few stray burritos, and a handful of blueberries, unpackaged.

Here’s what I served my family yesterday and today


Breakfast – Cinnamon Twist, Banana Bread, apples

Both breads were from the freezer

Lunch – leftover Chicken, Cheese sticks, sourdough bread, artichoke dip, apples

Dinner – Tacos with Homemade Corn Tortillas


Breakfast – Oatmeal, Applesauce

I offered sunflower seeds and cranberries for toppings.

Lunch – Artichoke Dip, Noodle Casserole, Apples

Dinner – Tamales, Beans, Salad

None of the items that I pulled from the freezer on Sunday thawed in time for dinner tonight. I was sorely tempted to make a run for the Border. But, I remembered that we had tamales and that was a quick fix supper.

  2. Hi, I too tend to forget what I have in the freezer. A while ago I started “pantry-cooking” every last week of the month, that way I use up stuff before it gets old, and it helps me to stay within budget. That last week I only shop for fresh veggies and superdeals, and I always have room inthe freezer.

  4. I made a huge pot of beans…and just had to buy some hamburger to add to it, to add a bit of flavor and some more texture. It’s cheap and very tasty 🙂 🙂 I don’t add salt, preferring to let everyone add their own salt to taste. that is my cheap eat for the week 🙂 🙂 I really like your ideas…very creative.   5. I think we have meat in the freezer from 2009…trying to decide if I’m going to chance it or just make some high-end dog food from it. 🙂 I’m sure the dog would love that.

    I’m doing my darndest to clear out our freezers (fridge and chest freezer) as well as my two dry good cabinets. Hoping to just stock up on fresh produce this week! I did purchase both spelt and garbanzo flour over the weekend so I’m anxious to try those out. Spelt will go in the bread machine and the garbanzo may get used as breading…
